Dahi Fuchka (also known as Dahi Puri in other regions of India) is a popular street food dish made from crispy puris (or fuchkas) filled with spiced potatoes, tangy tamarind chutney, and yogurt, and topped with various garnishes. It’s a refreshing and flavorful snack, perfect for any occasion.
Ingredients:
For the Fuchka/Puri:
Store-bought puris (or make them from scratch using semolina/atta)
For the Filling:
2 medium-sized boiled potatoes, mashed
1 small onion, finely chopped
1 green chili, finely chopped (optional)
1 tsp roasted cumin powder
1 tsp chaat masala
Salt to taste
Fresh coriander leaves, chopped
For the Dahi (Yogurt):
2 cups yogurt, whisked until smooth
1 tsp sugar (optional, for a sweet flavor)
Salt to taste
1/2 tsp roasted cumin powder
For Tamarind Chutney:
1/4 cup tamarind pulp
2 tbsp jaggery (or sugar)
1/2 tsp roasted cumin powder
1/2 tsp red chili powder
A pinch of salt
Garnishes:
Sev (thin gram flour noodles)
Pomegranate seeds (optional)
Fresh coriander leaves, chopped
Red chili powder
Roasted cumin powder
Instructions:
1. Prepare the Filling:
In a bowl, mix the mashed potatoes with chopped onions, green chilies, salt, chaat masala, and roasted cumin powder. You can also add some fresh coriander leaves for added flavor.
2. Prepare the Tamarind Chutney:
In a small saucepan, combine tamarind pulp, jaggery (or sugar), roasted cumin powder, red chili powder, and salt. Cook on medium heat until the chutney thickens. Set aside to cool.
3. Prepare the Yogurt:
Whisk the yogurt with a little sugar, salt, and roasted cumin powder until smooth. The yogurt should be thick but pourable.
4. Assemble the Dahi Fuchka:
Crack open the top of each puri and fill it with a spoonful of the potato mixture.
Drizzle tamarind chutney over the filling.
Spoon the whisked yogurt generously over the filled puris.
5. Garnish:
Sprinkle sev on top, followed by pomegranate seeds (if using), fresh coriander leaves, a pinch of red chili powder, and roasted cumin powder.
6. Serve Immediately:
Serve the Dahi Fuchka immediately so that the puris remain crisp, and enjoy the burst of flavors!
