Oh my god. I've tried 6 different recipes of this cake and none of them came out right. This is the first recipe that I madre that went so fantastic. This is the real recipe. It came out perfect. I'm so happy. I love it.

Hi there I'm a new baker. What did she mean when she said "bake in preheated to 200?" Do I have to put it in while I pre-heat the oven? I'm confused. Thank you.

Nattaporn Liu she means you pre-heat the oven to that temperature which means you don’t put it right away- you wait until the oven is that temperature.

People, keep in mind that the oven temperatures used in this video are celcius. If you are using a Farenheit oven, 200C is about 400F, and 160C is about 325F. Another thing to keep in mind is that those ovens have a fan below and a fan above the baking rack, which speeds up the baking (similar to a convection oven). If you don't have a convection oven, your baking time will be longer.

I've always been thought this kinda cheesecake made by combining sponge cake cruble with cream cheese! Now I know how to make a panfull that only cost me equal to two slice of bakery-made cheesecake.

I made this and unfortunately the cook time is not enough. I had to double the cook time and it still was a little under. Love the recipe, just would use less lemon juice and more cooking next time.

Hello. thank you for the recipe. I used a 16cm baking round mold, followed the cooking indications, and after 10 minutes at 200 and 20 minutes at 160, the surface of the cake seems uncooked still and kinda white. It's weird I followed exactly what you said. I'll let it longer in the hoven... maybe the hoven didn't preheat enough... i wonder...

***EDIT : I understand why. My hoven is small, and I made the baking paper around the mold too tall. I guess it blocked the circulation of the heat. I'll try again next time with less paper.

*** NEW attempt : so well, I tried again, without the paper. But still it took longer to cook. I guess the problem comes from my hoven... It's weird though. Anyone's got this kind of problem with the baking of the cake ?

Hi, this is a wonderful recipe and the taste of the cake is very good. However one problem, baking time given in recipe is not enough and my cake looks under baked. When cut, the cake all crumbles and collapse. May I know what happens? It says pre heated oven 200c @ 10mins + 160c @ 20mins. Did I get it wrong? Cos I dun understand Japanese. Pls help, it’s a wonderful recipe and I hope to perfect it. Thank you.

I LOVE most of your recipes and tried some of them which turned out very well. But I am sorry, I am afraid that I had to dislike this one. I made Japanese souffle/cotton cheesecakes over 20 times, although the recipes are different, the cakes are always perfect. This one looked fab out of oven at first sight, no cracks on top, but the skewer was so wet after 200 C 10 mins and 160 C 20 mins. I put it back and baked for another 20 mins, still so wet. It had runny batter inside and even couldn't hold the shape after the cake tin has been removed.

Yes, 30 mins using water-bath will not work for most ovens. Think hers is really hot. A lot of recipes require 1 hr, continue baking at a lower temperature after 30mins. Good luck!

I'm relatively new to baking, so perhaps someone can answer my question. If the egg white/sugar mixture is going into the main batter anyway, why not just keep the eggs whole and add them one time? Does whipping the egg whites into "stiff peaks" really make that difference in the recipe?

It makes all the difference!!! The egg whites at stiff peaks add their bubbles that make the cake super spongy and airy

@@niniguzvi , I tried add egg whites whipped to stiff peaks into a cheesecake recipe, and it actually made the cheesecake firmer. I'm guessing it only works for "cake" cakes, made with flour.

@@tristanhnl Well I think so , since normal cheesecake is a lot of cream cheese and just a little flour or none at all depending on the recipe. But this Japanese cheesecake is more like a sponge cake with cheese.

I tried this and the baking time is way too short. The centre was totally underbaked. I had to return it to the oven for an additional 30mins before the top even browned and the centre set.

HOWEVER!!! As this recipe is far more liquidy than the American standard, it would help to avert a MESS by letting viewers know to place the pan in the foil BEFORE pouring the mixture. Otherwise, I will let you know how it goes in a day or two.

Is that crystal sugar or flower sugar? (literally translated, so sorry) What does he mean with : after bake , 160C for 20 min? Like, I put it in the oven at 200C, Do I need to take the cake out or just change the oven temperature at 160? Dumb question but still

Each and every oven is different. You have to know your oven. It depends on how the heat that is maintained inside your oven during baking. Some ovens have a thermostat inside so you can accurately see the temp inside the oven. If you don’t have this, it would be a trial and error thing until you find the right timing for your particular oven.

ない場合は無糖のヨーグルトを50gに置き換えてください! ヨーグルトの場合はあっさりした感じに仕上がるので、焼き立てよりも(チーズが減る分あっさりしすぎて物足りないので)一晩冷やすほうがおすすめの食べ方です^^
