Knifes are notoriously hard to sharpen well because of their curved cutting edge. It is difficult to hold them at a consistent angle on the sharpening stone and I often rather I want it to be as sharp as a razor.
There are a lot of different designs for knife sharpening jigs but I wanted mine to be as simple as possible. I do not need a super accurate machine with a fancy complicated mechanism. For most purposes, a sanding block on a stick that runs through some guide hole works just fine.
