Jira - Issue security

Thank you for making this. I have a question. If I select current assignee in the security level, and apply that level to an issue, then only the assignee will be able to see the issue?

Issue level can be applied to the current assignee. From the moment you apply the security to the created issue, it will be seen by your assignee. Short answer, yes.
