Mince Pizza
Ingredients
Pizza Dough
• All-purpose flour 2.5 cups
• Instant yeast 1.5 tsp
• Salt 1.5 tsp
• Sugar 1.5 tsp
• Baking powder 1/4 tsp
• Oil 5 tbsp
• Warm milk 1 cup
• Some Semolina for dusting
Mince Topping
• Chicken Mince 500 grams (you can also use beef/mutton)
• Oil 3 tbsp
• Onion 1 chopped
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Red bell pepper 1, chopped
• Salt 1 tsp
• Turmeric powder 1/2 tsp
• Garam masala 3/4 tsp
• Cumin powder 3/4 tsp
• Black pepper powder 1 tsp
• Chat masala 1 tsp
• Tomato Puree 2 tsp
• Juice of 1/2 lemon
• Fresh coriander chopped, 1 handful
Assembly
• Ketchup
• Green chilies, slit
• Mozzarella cheese
Preparation
Pizza Dough
1. In a mixing bowl, add all-purpose flour, instant yeast, salt, sugar, baking powder. Mix
2. Add oil and mix thoroughly until oil is well incorporated in the flour.
3. Add warm milk gradually and start mixing, you might not need full 1 cup of milk. The dough should have a very soft consistency.
4. Knead the dough for at least 8-10 minutes until there are no lumps.
5. Shape the dough into a ball and apply some oil all over.
6. Place the dough in the bowl. Cover and allow to rise until double in size. It might take 45 minutes to 1 hour depending on the climate.
Mince Topping
1. Heat oil in a pot and add onions. Saute until soft.
2. Add ginger and garlic paste and saute until raw smell goes off.
3. Add red bell pepper and give it 1-2 stirs.
4. Now add the mince and mix thoroughly until there are no lumps in the mince.
5. Add salt, black pepper powder, turmeric powder, garam masala, cumin powder and chat masala powder. Mix and add tomato puree. Now cover and cook until the raw smell of the meat goes off.
6. Lastly, take off the lid and cook until the mince is completely dry.
7. Turn the flame off, add chopped coriander and mix. Mince topping is ready.
Assembly
1. Heat the oven at 230°C.
2. After the dough has doubled in size, deflate it using your hands. Sprinkle some semolina on an 9x13 inch pan and spread the dough evenly.
3. Apply ketchup on the pizza dough and cover with mozzarella cheese. Press a little with hands.
4. Lastly, spread the mince topping on the dough.
5. Arrange slit green chilies on top.
6. Bake at 230°C for 20 minutes.
7. Enjoy!
Chicken Pot Roast
Ingredients
• Whole chicken 1.2 kg or more, skin removed
• Salt 1 tsp
• Red chili powder 1 tsp
• Turmeric powder 1/2 tsp
• Garam masala 1 tsp
• Orange food colouring 1/4 tsp
• Tandoori Masala 1 tsp
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Juice of 1 lemon
• Yogurt 1/4 cup
Preparation
1. In a bowl, mix all the ingredients.
2. Clean, wash and pat dry the chicken.
3. Apply all over the chicken and marinate in the refrigerator for at least 2 hours or preferably overnight.
4. In a pot, add 3-4 tbsp of oil and place the chicken along with its marination.
5. When the marination starts to bubble, turn the flame to low and cover the pot with lid.
6. Cook for 20 minutes on each side (or until well done).
7. Serve immediately. Enjoy!
