Butter is absolutely kosher! You can't eat it after you've eaten meat because it's dairy. Most observant people wait 6 hours after eating meat before they will partake of dairy. Jews from Germany wait 3 hours and Jews from Holland wait 1 hour. Despite the ignorance of Jewish practice the recipe sounds great!

I don't get it...what's the problem with butter on pessach? Just get a kosher for pessach butter and don't eat it after meat...

I see now that she meant that if it's to be brought to the seder, at which everyone would eat a meat meal then you would not want to make it with butter. Sorry for the misunderstanding!
