Long time listener, first time caller. Chef John, made over a dozen of your recipes. You rock dude. Sometimes I alter your dishes a bit, as you encourage. For this recipe, I went with 50% ground beef and 50% breakfast sausage. It rocked like a ship in a typhoon. Keep up the good work young man!!!

It's a technique more then anything I do this with all kinds of meats and use a tomato salsa(jarred or home made) chopped chicken do it bacon salty and fattening but all right by me. If you keep your heat down I use a nice high quality non stick ( I hate cleaning eggs off stainless steel pans)

I now live half a block from Original Joes, ( that was before the fire) . It had changed, under new ownership, much as the city as changed, under those who were never invited to parties, and therefore think money will acceptance. I miss a corner store where I could buy a baguette, and I'm a black guy.

Wow. My dad brought this recipe back from one of his frequent trips to San Francisco (home = Seattle) back in the 60's. It was a big hit with their friends then....and with ours now! I did discover that a little grating of fresh nutmeg rocks this dish. :-)

I ate at Original Joes from 1967 to 1974 and this was one of my favorite - this recipe is perfect. I have been able to order this for the last decade or more from a chef in Newport, Or. Such a treat to make it at home, just FYI for single cooks, I doubled the recipe, served hot on my plate and 3 storage containers including the topping cheese, let the other servings cool to room temp before refrigeration. I did the spinach yesterday and just barely wilted it and then wrapped in paper towels in container in the fridge. Took it out hours before assembling the dish and picked it apart into a fluffy mound.

Been to the San Jose location and that is all I ever ordered when my parents took me as a kid. Mom tried making it a few times and it wasn't half bad, but sitting at the counter in the restaurant and watching it be prepared was the ultimate experience.

pippin 1964 It's a fact that the hominids that discovered the cooking of meat are the reason humans even exist at all. Without this advancement our species couldn't of been possible without both the protein from meat and the ease of digestion caused by the cooking of meat. Take a college level anthropology class and you'll understand how fundamental the cooking and eating of meat was to the development of the human race and why a vegetarian diet isn't progressive, but regressive and stupid.

I go to Original Joe's quite often - cayenne pepper is not needed for Joe's Special. Call it something different if you add it!

Wow, John, you struck a chord here. I used to bail out of working out at the Olympic Club around midnight, then on down to Original Joe's hollow with hunger. The Joe's Special, a glass of red, and a couple of baskets of bread was my usual remedy; ok, maybe veal piccata now and then. I was heartbroken when they didn't rebuild after the fire. As for defatting, I admit I would "fare la scarpetta", what else was all that bread for? Bless the Italians, any group that decriminalizes mopping up the last bit of the chef's efforts demonstrates deep civility and humanity.

Original Joe's was also located in San Jose, CA. It is still open and is rated #9 of 1,980 Restaurants in San Jose (Trip Advisor). I have eaten at both SF and SJ locations--delicious memories.

There is also an Original Joe’s in San Jose. I grew up eating this there and eat there and do so every time I go back home. It’s not breakfast. It’s on the regular menu - they don’t serve breakfast; if fact, they no longer offer lunch service. Joe’s quartered their mushrooms instead of slicing them. And never served it with a slice of tomato. This dish is great for leftovers, made at home or from Joe’s itself.

Born in SF. My grandmother was a cook at many SF restaurants. She used to make Joe Special for my brother and me. Amazed at how many never heard of it. Thank you for confirming I'm not nuts! (and yes, SF sourdough toast is a must!)

I didn't know Original Joe's was that famous. I used to live in San Francisco and I used to go there sometimes for dinner. I always had their steak & mushrooms with pasta on the side because I was addicted to it. Well now I know about another Original Joe's dish, Thank you! There used to be an 'Original Joe's' restaurant in San Jose CA on 1st Street and San Carlos Blvd. Been there a few times. I've had that spinach/beef meal they serve, it was too much to eat! Of course, it was very good. But they were also well known for their steak dinners, which were also very good. Thanks for the recipe. IIRC, I think I remember it had mozzarella cheese in it? Also, a LOT of garlic! Could be wrong . . . been quite awhile since I'd been there . . .

A guy came in late at night and asked for some food. The waiter said we are closing we are out of everything. The cook said Ill throw some things together for you. He mixed up what you see above and it was a hit. That is how they came up with this menu. Been going there since 1970. Was told this by one of the waiters.. True story.

Yes, I remember this dish Quite well, moved to S.F. in 72, I was four years old. Orig. Joe's was always a treat. They're SF sourdough ground chuck burger was simply the best. I consider myself lucky to have been a patron at Joe's before they closed.

San Francisco family! This was a pretty common dinner at our house and we loved it! Mushrooms are a must! I still have it for breakfast when i see it on a menu, luckily many places do offer it.

Thank you. I’ll need to try this. And I hope you’ll permit this digression. I used to enjoy this at New Joe’s on Broadway in San Francisco. It’s now regrettably long gone, but, like the other Joe’s, it was a wonderful Italian grill with its roots in Tuscany. They had an open kitchen and counter seating, and I enjoyed many a late supper sitting at the counter and kibitzing with the cooks. I learned to make zabagleoni, among other dishes, seated at that counter. Whether Joe’s Special is primarily a breakfast dish can be a subject for debate. It made a fine lunch and could be just the thing late at night. And truly, the best breakfast in San Francisco was, and still is, the Eggs Benedict and an Irish Coffee at The Buena Vista. Those were the days.

Mom used to make Joe's Special in the 1960s for supper. (Think meal for six kids cooked in big Faberware pot). She'd brown the meat. Add garlic. Whisk a thawed block of frozen spinach with eggs in a bowl. Dump eggs+spinach in the pot. Quickly stir just enough to blend. Cover and let steam on very low heat. Came out with a little more solid consitancy. Could be cut in squares. Every family made Joe's Special a little differently. My neighborhood was big on Garlic.

Ah, Original Joe's...the ONLY thing about California I miss after moving away. As good as the Scramble is (and ALL their food is simply fantastic) their best menu item is the red Mushroom Sauce. I can remember driving over an hour to San Jose just to pick up a pint of the sauce (available A la Carte) and warm bread. Now that I think about it, San Jose isn't all that far from Kentucky...
