It’s all about gli ingredienti. Italians eat pasta every day, sometimes twice a day. On average they are eating pizza once or twice a week. Italy has a national obesity rate of around 10%, compare that to ~40% in America. Similar to Mikey, I cook authentic Italian pasta dishes for my family almost every day (lunch or dinner) and Neapolitan pizza at least once a week. Bear in mind, classic Italian dishes don’t often use rich, over the top ingredients like heavy cream or butter. You have to understand, if you are cooking with artisan pasta, DOP San Marzanos, high quality hard cheeses like parmigiano reggiano or pecorino romano, high quality EVOO, organic herbs and spices, etc. you are consuming some of the healthiest, most nutrient dense food on the planet.

He got into a calorie intake routine that works for his calorie expenditure and since he eats a lot of cheese, his protein intake is also great, so his muscle mass is sustained AND the food he eats is one his body agrees with.

And eventually fat and unhealthy, unless you're young and train like a beast like him. And there are (or more so were before Covid) definitely obese people in Italy, especially in the north like near Milan. The combination of their high air pollution, high cigarette smoking, and obesity among the older folks in northern Italy (particularly in the valleys, like Milan) is why they were initially hit fairly hard by Covid when it got there. It wasn't because Covid was so ridiculously strong or the like, but the northern Italy hospital system was already in stress and breakdown (like NYC as well), combined with the above 3 factors. It was a perfect storm condition. (Then the ever opportunistic corporate media, politicians, and governments used the above, took it out of context, to scare the rest of us). In any case, point being, for most more normal people, pizza is only good in moderation. It is NOT a "health food" by any stretch of the imagination or term. Wheat/gluten is hard to fully digest, pizza is loaded with saturated fat and unless you're using buffalo mozzarella and sheep romano, also loaded with inflammation and mucous producing A1 casein proteins, and highly overall caloric but lacking in broad spectrum of micro nutrients. It is not quite a junk food, but its not far from either.

@@justinw1765 I am from the South (Naples, the birthplace of pizza, hometown of spaghetti, and where the most famous pasta makers are from, lol). I live in Japan now, but I lived and also worked in Milan. For cultural reasons, pasta is well studied in Southern schools. Let me be precise I did not say it will make you "lean"... it was exactly the point of my joke. You will be happy. You might get fat. I do not know where did you get your stats about obesity rates, but they do not add up. Southerners (being local food generally richer in calories and especially of carbs) have a higher level of obesity (11 percent roughly) compared to the North (around 10.5). Small difference but still there. Milan is particularly in good shape (2 out of 3 under 50 go to the gym 2 or more times a week). Central Regions have only 8 percent of total obesity. Italy is overall leaner than the USA (like four times) and other European countries and has much lower (roughly a fifth) of obesity-related death than the US and even lower than France (Barbieri et al. 2017). Studies indicate indirect proportionality between obesity and income, and the South is much poorer than the North. Nobody, however, know exactly what caused the weight increase over the last 20 years (Italian got 1.7 to 3.6 percent fatter). A theory blames the school cuts, which essentially destroyed public school after-class activities (highly focused on sports... especially competitive ones). We know that Italian youth tend to be obese more often than in other countries. An explanation is again cultural: in Italy, especially in the Central and Southern regions, is considered polite to offer food to kids, and the kids are taught not to refuse that. There are plenty of anthropological works on the matter. That is my area of expertise btw... The foreign idea of "pizza" is not ours. Also, the foreign concept of cheese is not the same. Italian pizza (which Musumeci makes, judging by the pics I found and his comment about going around looking for cheese - pecorino and muzzarell... notice he did not say Mozzarella but muzzarell) is a thin crust. American pizza, which is the most commercialized in the world (i am not sure where you are from), is doughy and thick. Most of the "mozzarella" used in foreign countries is "natural cheese" (in Italian formaggio di pasta filata) which of natural as only the name. Italian (in the South but generally in the whole country) use fiordilatte and provola (muzzarell), which are not pasteurized low saturated fat cheese mainly still produced through affioramento (not sure of the word in English, is the process for which they let the cheese surface from a previously obtained serum). I had pasta and pizza growing up, and now I eat rice more often (because of my Japanese wife). I noticed I tend to metabolize "Italian" type of carbs much better; it might be genetic. There is no scientific literature on the matter. It is true that the Bergamo area you are referring to (was not really Milan) has a significant number of overweight population, but guess what? is also the provincia (communal area) of Italy which consumes less pasta (a third of the national average - which is 23 kg a year - and almost 5 times less than Naples or Palermo - 42 kg)! They are traditionally bread eaters and consume a large quantity of meat, instead of alternating it with fish like in the South, especially BUTTER instead of olive oil. Again, the reason is cultural. Northern regions are in the only real plain of the country, Pianura Padana, where cattle hold a central role in subsistence and intergenerational wealth. Any food should be consumed in moderation, but the pizza Italians eat in Italy is not an unhealthy food. PERIOD. It is not less healthy than pasta or bread with tomatoes and cheese. If you live in the USA, you can definitely make it as the original - US east coast is the first importing market in the world of Italian products!). Neapolitan pizza has between 650 and 900 cal. A steak (cooked without butter) has around the same (650-850). Sure, one is proteins, and the other is carbs, but they are not substantially different with the appropriate activities. If you do not train 8hrs a day like a pro athlete, moderation is the name of the game, whether it is pizza or steak and broccoli. Edit: I wanted to add the exact study about anthropology of food but it is mostly in Italian. You can give a look to what also Andrea Muehlebach wrote in her book about northern regions, it is the Moral Neoliberal (I think 2nd chapter about togetherness... sorry I do not have it around) or Rachel Black Porta Palazzo about Italian markets and food consumption.

@@EJ-ul1zs Science says nothing on nutrition because there are no experimental studies of any significant length. A 3 month study only informs you of the impacts of 3 months of that diet, 3 month+1 day and it's all speculations. And you will never have the funds, let alone get past an ethics committee, to lock people for 20+ years in a lab. Also "raw ingredients" is not some magical ingredients. The only thing that matters because we can study it, are the mechanisms of the human metabolism. All carbs trigger an insulin response. Hell in some people, even the sweet taste of artificial sweeteners (no ingestion involved) is enough to trigger an insulin response. And mixing carbs and fats WILL activate the Randle cycle; which is very bad news for your health if you don't expend more energy than you derrive from your food; which is hard to achieve on a diet that contain carbs because of the lack of satiety it provides compared to fats and protein. However, that guy is very young, physically active, does IF, and has a history of dieting on a mental-illness level to boot. It will take quite some years for his ill-adapted diet to do noticeable damages. And if he's got good genetics, his body can take the abuse; but that doesn't mean it's the best he could be, far from it.

@@EJ-ul1zs The only genetics that would impact people's need for carbs to thrive, to the best of my knowledge, are people with ancestry within the last 5 generations that are of equatorial descent. Those people might need up to 20% of their energetic intake to come from carbs in order to thrive yes, and they should not be forgotten. As for carbs giving you satiety, have you truly asked yourself whether it was how your body responded, or whether it was your gut bacteria exerting its influence on you? My money is on the latter. Anyway, I hope your health is doing good and will keep doing good, I just haven't seen anything that points towards carbs being good for it except in a few exceptions.
