I’m learning, but some say don’t use a knife on Shabbat until the entire duration of Shabbat is over on Saturday night after Havdallah

What's the best approach when people don't know/understand to remain silent between the blessing and completion of the commandment? This occurs during kiddush at shul sometimes and I usually smile and hold up a finger to wait but I'm not sure if this is appropriate because it seems like I'm scolding.

Don't Sephardis "rip" the bread open with their hands, and then pass it around the table? No need for a bread knife!
