I think it's the type of bar where people sit and therefore tend to chat more. They play at a very comfortable level as well so I think that's why you're still able to hear the chat in the background.

Wow! Guitar night w/ John Pisano! I looked forward to it every week. Probably the best series I’ve ever attended. And Pat Kelley, whom I met there and took guitar lessons from-! The most generous and amazing guitar teacher (Pat, if you read these comments, thank you from Kimi). Really a blast to watch and listen to this great performance by both (plus bassist and drums, of course).
