But if you are familiar with the nuance of the situation, you can tell this guy takes genuine pride in their food and is approaching this with the joyful attitude of sharing something he loves. 1. He is not a low grade server 2. Multiple workers are standing around waiting for the opportunity to be of service 3. Cracking jokes and bragging about prizes 4. Giving Ollie the Abuelitas None of these things are required, it's a token of genuine hospitality from someone who isn't concerned about earning a tip.

Smile at your neighbors, ask them for sugar, borrow their lawnmower. Maybe they’ll stop in and give you some money to get it trimmed if they notice it particularly overgrown and you can’t get on top of it. It’s a different world

In all fairness, if you have an award winning restaurant in Austin of all places, you’re gonna be accustomed to that kind of customer. Austin’s chock full of the eccentric types. I’m sure if they went to an ol’ abuella’s restaurant in San Antonio they’d have a much different reception.

I lived in Austin for 15 years and have since relocated to CO. The Mexican fare up here can't compare to real TX tex-mex. They do have a Chuys up here so that's what I eat when I get a craving. I haven't eaten at a taco bell since I moved to TX and probably will never again!

First, Taco Bell doesn't claim to be traditional Mexican food. Texas changed that food to Tex-Mex for a reason. Americans like flour tortillas, cheese, beef for fajitas and crispy tacos. We love queso. NONE of that is Mexican. Period. How can you compare the two? Mexico uses hominy, tripe, goat, and a lot of peppers. It's like Mexico doesn't make comparable fried chicken or hamburgers. Italian American is not the same as different regions of Italy. I, personally, don't like interior Mexican cooking. Shrug.

Nesquick is overly sweet and because of that it can end up messing with your stomach but Abuelita has that perfect balance of sweetness and creaminess that makes it so hard to emulate. Fact: there are more than 500 variations of mole, in all colors and textures, being the mole poblano (the one they tried in the video) the most well known. And yes, most of mole recipes comes from Oaxaca state. And no, the real recipe doesn't include commercial chocolate but true cacao (or at least, raw cocoa) and other 25 ingredients.

Texas IMO is a food paradise and is diversified as the people. No matter where you are there will be something you like and reminds you of home. Even in deep East Texas there is a large diversity of cuisines from Cajun to what I call country food (peas, corn, okra, turnip greens, fried catfish). The one that binds us all is Tex-Mex and places like Eldorado Café exemplifies Texas hospitality.

I’ve lived in Austin for 30 years and watched Jolly for 5. I am incredibly happy to see my favorite Tex Mex joint featured. Joel’s been kicking around Austin kitchens and restaurants for years. His team at El Dorado deserve ALL the goodwill and recognition. Deceptively simply food with layers and layers of amazing flavor and great staff who will make you feel like a regular customer the minute you walk in.

sounds so good! Last time i was in Austin, i went to The Salt Lick BBQ. Simply awesome! What's the best BBQ in AUstin and next time i'm there i'm definitley gonna check out the El Dorado! Great vid!

@@shanecrowe5955 So many “best” bbq joints. Franklin’s gets the most media coverage and their brisket is definitely the best in the area most consistently. It tastes like it was made from the happiest cows on Planet Earth. It’s really special. They accept a limited number of pick up orders 30 days in advance if you want to skip the multiple hours wait. Snow’s in Lexington (50 mins outside of outside of Austin, Saturday AM only) has won Texas Monthly’s Best BBQ twice (pork ribs, sausage, smoked chicken, and beans are their best offerings.) This is my personal favorite. Leroy & Lewis is killing it right now and, wow, a major talent. Terry Blacks is a Best All Around because every dish and side is an A or A+ and they have their operation running right. You experience less of “Item Sold Out” 20 minutes after opening then at many other spots. If you are coming from out of town and don’t want to miss out on a variety of meats, TB is always a solid choice. Their bottled condiment sauces (not bbq sauce, more like Hot Ones hot sauces) like Chipotle Mustard are available for sale and a great way to elevate sandwiches and eggs back home. Interstellar in Cedar Park (15 mins Northwest) is another huge up-and-comer but it seems difficult to make enough BBQ to meet demand. Saturdays have a bigger menu with some featured meats but it’s very limited. Honestly, it’s such a crapshoot, I haven’t even tried ordering from them for several months.

There are different states in Mexico that will swap out the brand or tartness by using dark chocolate and some will even make their own chocolate bars from scratch and use them but the recipe requires chocolate bars.

@@PorcupinePunched Although no states in Mexico traditionally use Nesquik or other powder hot chocolate mixes on their mole recipes, you could use it in a pinch for the chocolate flavor. I personally don't like it since it makes the mole sauce taste much sweeter due to the extra ingredients added to them and I'm not a fan of sweet sauces, but you could definitely use it. And btw... He's 100% correct in saying that in different states we use different chocolates for our mole. Abuelita is the most common store-bought chocolate but there's many brands that can be used for mole. In the state of Chihuahua there's a preference for Oso chocolate and in the south it is much more common to buy homemade chocolate bars.

I've only had one type of mole that I think nesquik could maybe work in, used in any others and it would just ruin the flavor profile and completely change dish. With the time and work involved in making mole who is going to settle for using the wrong ingredient? I'm not sure what kind of family you come from, but mine and nobody's that we knew had fancy pre-mixed chocolate milk powder, we made it ourselves from cocoa and sugar because those are staple pantry ingredients and you can use them in more than one thing, like mole. Sure cocoa powder isn't traditional, but in a pinch it will work and not mess up the flavors to such an extent.

I went to England last year as a native Texan that's half Mexican and they literally thought Nacho Cheese Doritos were Tortilla Chips. That's all you could find if you went looking for some in the local stores. Such a shame really, I was dying without some, but I didn't have enough knowledge of their ovens to figure it out and handmake em myself.

@rhi91 are you down in Southern England or up in Northern England? I imagine down south England (i.e.: closer in proximity to London), you will find plenty. Up in Northern England, not a single tortilla chip and I was not about to take all the trains to go down to London for a bag of tortilla chips 🤣 cuz that's crazy! And I only was able to go to Tescos because in the smaller villages up North, that's all they got. Now going to York (a big city) could probably find tortilla chips, but if I'm going to a big city, I'm not looking for my personal comfort food as a tourist. If I'm staying in the smaller villages where restaurants are just fish n chip shops, yeah. I'd appreciate some comfort food.

Mole is a huge dish in Mexico. Everyone has their own recipes, but most will include chocolate, peanut butter, almonds, dried chilis, and about 30 other ingredients. It's usually served at weddings or quincineras, or other special occasions. It's usually served over bone in chicken.

I so miss it. My aunt use to make it it for our family unions, she married a Mexican and her mother in law taught her how to make her husband’s favorite dishes. Her mole was always gone first without everyone getting some, huge family and she bought 2 huge dishes of it. I asked her to teach me, nope she wouldn’t break her promise to her mother in law.

I'm in Austin, and Eldorado Cafe is our favorite spot. Plus, the owners are our good friends, and both of my kids work there! It really is as good as it looks in the video. No trickery there. I love that these guys had such a great experience. Everybody should check it out when they are in Austin.

Try this - my favorite TexMex delivery system is CORN tortillas. I buy them or make the tortillas at home. I have a tortilla press (used to shape the tortilla as flat as possible) but you don’t really need one. Strong arms and a rolling pin are all you need! For a non-exhausting corn tortilla session, buy them fresh at the store. Try this with something as simple as scrambled eggs with cheese and diced tomatoes. Add avocado, diced onions, whatever seasoning you prefer and definitely hot sauce to your taste.

Tex-Mex is a hard one because depending where you go it's going to be different. Austin is always trying out new dishes. Look for two things for a traditional meal. One check if the parking lot is full and two see if you see a lot of Hispanic or Mexican customers.

There is nothing in this video that I can't get at any generic mexican restaurant in the country. It may have started in texas, but it's not unique to texas.
