Recently we went to the South in the US and had our eyes opened to a bunch of amazing new foods, but there was one thing that we really wanted to introduce to people back home! So we got the help of a London-based cook from the South, and brought authentic Biscuits and Gravy to a British High School!

I've lived here in the UK for a few years, and let me tell you, these people are adorably obsessed with their beans on toast. It's actually what we would call "pork and beans" out of a can. I am a Southern American. Some years ago I met a British man online who was horrified at the idea of putting gravy on biscuits when I mentioned it. I tried to explain what American biscuits and sausage gravy are but he was still skeptical. I promised to make it for him if we ever met in person, and long story short I eventually did just that. Now, we've been married for almost ten years. I'm sure he married me for the biscuits and gravy.

Awesome. When an American can convince a skeptical Brit to try something that sounds so unappealing as sausage gravy (aka chopped up ferret) and biscuits and they find that it tastes better than it looks they can't do anything but ask you to marry them, LOL ! I'm not a Southerner but do like gravy and biscuits. Although, I prefer chicken fried chicken w/gravy or make my own version of SOS using white gravy and chicken on toast. Never cared for the taste of chipped beef (we had that growing up as kids). Too salty so I substituted leftover cooked chicken.

Not to mention while most comparable to a scone an American biscuit is still very different from them, meaning if they had ever tried a white gravy on a scone it would have been an entirely different experience.

Believe it or not, but there are a lot of Americans who've never eaten biscuits and gravy. Biscuits and cream or sausage gravy is usually from the South or the southern US. It was a poor person's food, like grits, made with leftovers or the bits of meat, seasonings, and oil left stuck to the bottom of the fry pan that you have to scrape off, but which tastes fantastic because the seasonings are baked in and there are crispy pieces. Then you add cream and flour and salt and pepper to make the gravy, pour it over biscuits or toast, and Voila! You have a quick meal, which is now mostly eaten for breakfast. It's very flavorful. My Mother, who is from Mississippi, made it all the time, especially after she fried a bunch of sausages for breakfast. She'd also make the cream gravy with crumbled-up pieces of sausage init, and then you pull the biscuits into halves, place a piece of (round) sausage on top of each half and pour the cream or sausage gravy a top of if. Yum!!!

For the record, so the British kids know, we *also* have regular brown runny gravy that we eat on turkey and whatnot. The white gravy is pretty much just for things like these biscuits, and fried & breaded chicken steak, and fried & breaded pork steak (kinda like schnitzel). The confusion about the nomenclature for American biscuits comes from the dish’s history. Biscuits are a modernized version of hard tack, which people in the American frontier called “biscuits.” They called it that because (like an English biscuit and biscotti) hard tack is baked twice. American frontier people’s used this as a method to preserve it. One would typically make a large quantity of biscuits/hard tack and then soften it with a liquid or sauce when ready to eat. This method of preserving and preparing biscuits/hard tack is what developed into the dish Biscuits and Gravy.

Bring a small pot of water to a boil and turn off the heat and steep 4 lipton tea bags for 10 minutes. Remove tea bags and bring back to a boil, turn off heat and stir in 2-3 cups of sugar until completely dissolved basically creating a tea syrup. While still very hot poor over a pitcher full of ice and stir quickly and then add filtered water until the pitcher is full and refrigerate. He was tired of making it himself so it became my job to make it for him every couple days, i didn't mind though since he was awesome. Also he made the best fried pork shoulder steaks with white gravy, easily one of my favorite meals.
