Most Peruvian restaurants in the UK overpower their dishes with Tamarind sauce. It's an insult to the western palette.

@@stephenveerasammy3074 Arroz con mariscos (Peruvian Paella), Saltado de mariscos (Seafood saltado), Peruvian ceviche (the best ceviche and much different than Mexican ceviche), Sanguchon (pork sandwich with yams), Aguadito (peruvian green soup), Tallarin Verde (Peruvian pesto spaghetti), Pescado a lo Macho (fried fish fillet in a seafood sauce).

I've made a countless number of lomo saltado recipes (Ricardo Zarate's is my favorite) over a high heat wok burner. Most of the recipes you find online or in cookbooks are pretty similar so hats off to @hungryJona for doing something interesting and different (making a stock, using oyster sauce, tallow, etc). @hungryjona would love to see your take on Aji Verde sauce.

aji verde is a copy of mexican salsa, but no surprise, about 10-15% of the Peruvian cuisine is influence by Mexican cuisine according to their national cookbook

The best lomo I’ve ever had was at a place in Baltimore and it truly might be the best thing I’ve ever eaten in my life. I have yet to find someplace local that does it justice, might have to take a crack at it with a gas stove and my wok.

I would like to mention that at Demi god and higher u get almost all your strings armor broken. F12 , back 12 etc. u have to bait a armor move to survive. Maybe close some gaps would be also an idea
