They aren't made with leftover dough. They're made with breadstick dough, which is in entirely separate boxes to the pizza dough (it's all frozen and proofed overnight or day of in a proofer when they run out of prepped dough). The cinnamon sticks are just an order of breadsticks cut in half and dusted with cinnamon instead of breadstick seasoning. The cinnamon mix comes in huge bags and is the same stuff that Taco Bell uses. It straight up comes in Taco Bell branded bags. Worked delivery with them for 3 years and had to prep countless pans of dough.

You generally have to make the cinnamon sticks to order because you gotta put on the fake butter and the cinnamon and cover and... uk, it's a whole different process lol. Leftover implies extra stuff left over. Like, you can't convert an order of breadsticks to cinnamon sticks. .... I mean, you *could* and some people might but you're not supposed to. If you ever get a like... firm cinnamon stick... that's what happened lol they screwed you. 😂

Made this today and it's officially my new favorite Papa recipe so far (I've made a lot). I initially screwed up by adding more water than stated thinking the dough looked too dry (didn't pay attention to the video) but I easily added more flour and ended up with more sticks. They were huge and ultra fluffy and the brown butter put it on another level. This is your sign to make it yourself. I'm already craving more

I use to work a Pizza Hut and we just use the same dough for bread sticks and cheese sticks as we do for cinnamon sticks. But I'm sure more people can figure that one out. But the Cinnabon Minis were a different monster also together. Imagine prepping thirty of bread sticks and thirty Cinnabon Minis. Man I'm glad I don't do that job any more. But I kind of miss the free food and basically getting forty percent off everything.

The smoke alarm issue is probably because it's an ionization smoke alarm which is better at detecting small particles like when using your oven, but not so good at big particles such as smoke. Technology Connections has a video explaining better

Regarding your complaints about the smoke alarm: you probably have an ionic smoke detector, which uses a small amount of a radioactive isotope to ionize the air in a chamber and let current flow between two electrodes that make up the chamber. Ionic smoke detectors are much less sensitive than photoelectric smoke detectors to the more-visible smoke from smoldering fires but are more sensitive to very fine particulate smoke. Thus, ionic smoke detectors are more likely to cause false alarms from an oven in a kitchen, but are less sensitive to the denser, coarser smoke from smoking the butter. Photoelectric smoke detectors use light and a light sensor that is shielded from the light; when smoky air flows through the chamber with the light and the sensor, the light illuminates the smoke and the light sensor can detect the illuminated smoke. Photoelectric smoke detectors are much more sensitive to the coarser smoke from smoldering fires like the one used to smoke the butter, triggering as much as *an hour* faster than ionic smoke detectors in response to smoldering fires. However, photoelectric smoke detectors are somewhat less sensitive to the finer smoke that comes from "fast fires"/flaming fires, so they trigger 30 to 90 seconds *slower* than ionic smoke detectors in response to fast fires that flame without a smoldering stage (many, if not most, fires smolder for some time before they flame). Thus, an ionic smoke detector, which you likely have, would have a tendency to trigger in response to almost-invisible, fine-particle smoke coming from your oven without reacting quickly to the coarse-particle, visible smoke from the smoldering compressed wood when you smoked your butter. Generally, using photoelectric smoke detectors would result in fewer false alarms from the kitchen (due to them being somewhat less sensitive to the fine-particle smoke that tends to be more common with cooking) and would be faster to respond to that coarse-particle smoke from the smoldering wood from smoking the butter. TL;DR: You probably have ionic smoke detectors; photoelectric smoke detectors would give you less false alarms while likely being faster to respond to coarse, visible smoke from smoldering fires like the one used to smoke the butter.

I used all purpose flour and I only let the dough rise 1 and a half hour. I also didn’t use a scale and converted the measurements. the outcome definitely did not come out as good as Joshua’s but it was still decent. Mine came out kinda doughy and with a harder outer shell kinda like a baguette

Former Pizza Hut cook here. We didn't make the cinnamon sticks with leftover dough, we actually had dough specifically set aside for them and the regular breadsticks. It was the same dough as the pan crust pizzas (we would occasionally use the Dinner Box pizza dough cut into sticks to make them when we didn't prep enough breadstick dough pans up), put into a rectangular deep dish pizza pan with a bunch of vegetable oil on the bottom. The "butter" we used was labelled "Buttery-Flavored Seasoning Oil," so basically liquid margarine with extra artificial butter flavoring. It was put on the sticks with the cinnamon-sugar mix before baking, and they're baked covered to keep them from burning.

Hey Josh, if you were wondering why your alarm goes off for opening the oven but not literal smoke, it is probably because you have an ionization fire alarm and not a photoelectric one. Might be smart to replace the one near your kitchen with a photoelectric one. Shouldn't have false alarms when opening the oven anymore, but could go off if the smoke isn't ventilated away :)

As a former pizza hut employee, it's the same dough as the breadsticks but it's brushed with margarine and then the cinnamon is added. It gets covered before it goes into the oven so it doesn't burn

I used to work for a Pizza Hut. I don’t know whether it’s reused dough in the factory, but in the store itself it’s a separate breadstick dough. It comes to the store frozen and gets proofed overnight for the next day. For the regular breadsticks you put them in the pizza oven and add butter and seasoning on top after, but the cinnamon sticks you put the butter and cinnamon-sugar on first and then cook it with a lid

Hey josh, Prob been said over and over by now but I use to work at the Hut. Its the same breadstick dough. Prefrozen perforated stick dough that gets sprayed in cooking spray, left in the refrigerator to defrost, outside the fridge and in a proofing box to warm. To cook that slather it in liquid butter and cinnamon, pop a lid on it and into the oven it goes. Cut, serve, regret.

Josh, the reason the the alarm goes off for the oven and not the smoke is because thats a fire detection alarm which detects rapid rises in temperature where as a smoke detector has a small laser inside that triggers the alarm when smoke particles pass through it.

I recall seeing there are two main types (or only two types) one requires there to be an actual flame to go off and the other which can still not go off despite being in a room that's currently ablaze. Might be remembering wrong, but I recommend having a mix of the two for safety's sake.

I think what's nice about the Pizza Hut ones is that the butter and sugar is applied prior to baking in the oven. Or at least they were when I was a teen in high school making them at the hut.

When I worked there they made us use a full pan of bread sticks brush the butter on the dough sprinkle the cinnamon sugar and then place in the oven

6:49 This likely has to do with the type of smoke alarm you use. Smoke alarms that use radiation to detect smoke don't tend to pick up visible smoke very well, which comes mostly from the smoldering stage of a fire, but are very good at detecting very small, nearly invisible smoke particles, which are common in an active fire. This is why opening the oven sets it off, but the clearly visible smoke from your smoldering wood doesn't. If you instead switched to optical based smoke detectors, it would detect the smoldering from the wood and get set off, but not the oven opening. Generally, optical smoke detectors are a safer option because they detect the smoldering stage of a fire, before it is an actual problem, while some radiation based smoke detectors won't even detect a smoldering fire when the entire room is filled with impenetrable smoke. The only slight advantage of radiation based smoke detectors is that in a very sudden, active fire, they tend to activate sooner, but this is on an order of seconds, while in a smoldering fire, optical detectors are set off tens of minutes, even over an hour before radiation based detectors

@@ygobe2 While yes that would provide optimal safety, that gets expensive, and doesn't help as much as you would think. Optical smoke alarms activate minutes to hours before radioactive smoke alarms, but radioactive smoke alarms usually only activate a matter of seconds before optical smoke alarms, if there is even a measurable time difference at all. Having both is probably a good idea just to be safe, but one of each in every room would likely be excessive

I don’t know if Josh will ever see but you should try swapping your smoke alarm type! A lot of the radioactive isotope style detectors are prone to nuisance alarms from ovens and the like, but are bad at actually responding to visible smoke! The optical/led based detectors are a more modern approach and react more specifically to visible smoke rather than ovens or similar

When I worked at PH in 2010 we would use breadstick dough, smear melted butter/oil on top, and sprinkle cinnamon sugar on top before we baked
