Here's a good tip for anyone wanting to this. At the point in which you add the vinegar if you add a cup room temp buttermilk you will get a cheese that taste more like the farmers cheese from the market. I have made this and added some red pepper flake and jalapenos and then smoke it for a few days to make Pepper Jack cheese. I am sure waxing it and aging it would make it even better. I also after squeezing I press it between 2 boards to give it more surface area when smoking. Hope this helps..

Great inspirational and informative video. 3rd shift guy here and it's good to go to sleep with some great ideas floating around in my head. LOL I just wanted to say thanks to you guys for the wisdom, and to say to you Dave. My Pastor 'Pat Murray' with The Living Word in Vandalia, Ohio said; 'a great leader must be able to be lead', and you've shown that you are humble enough to be 'lead' and by a young man at that. On the subject of cheese, great job Ryan. Thanks for sharing. I've seen it before, but wanna try it now for sure. You guys are having too much fun. BTW, it was little miss muffit who sat on her tuffit eating her curds and whey, when along came a spider who sat down beside her, what he did after that IDK. LOL! My memory don't go back that far and recollect everything.

That is the way my Grandparents use to make cheese. It appears you guys were having a little fun in making this video! Great share! Should do one on making butter or cottage cheese next! I think having a goat is a great idea to have on the trail...use them for packing gear and food source! Multi purpose as you always say Dave! Thanks too Ryan in sharing in the video!

the whey can be added to follow on meals like stews in direct replacement for water in the recipe. Or it can be fed to livestock. It has food value, it can be consumed as hydration liquid also.

wonderful! this must have been the 23rd, it was in the 60's that day. this sort of really useful simple processes, makes me realize how many staple foods in my diet, even vinegar.. for example, that i have no idea how to make. our children's public education ( as well as the education we give them as parents ) should really focus more on imparting to them this sort of essential knowledge, that people many places likely learn growing up on a farm.

I like the fact that you give things a try no matter what your first thought , your not a cheese maker , but I think this has earned a place in your pack , I saw your eyes light up when he said " add bacon " and that it can be dipped in wax and preserved . Being a caveman I've always say " bash it in the head and stick it in the fire and be done with it " , but this is something I will try , thanks Dave , great video !!!

@dahartman88 well if you have access to milk then you should be able to find vinegar, or make some which is pretty easy, or just use lemon juice. or just make yogurt,

Very cool video! And a very smart kid he is! Of course after watching the video me and the boy just had to run to the kitchen and try this out! Came out pretty good too. Didn't use as much vinegar as you guys did, was affraid of a vinegery taste, still came out good and no vinegar taste to it either, and as suggested by your personal chef, I added salt and pepper to it.

Excellent! Easy! Another great "how to"! Help me understand why any contaminates in the creek water become "safe" to digest? also~ Please reiterate at what point one would add salt, etc?

Dave it was a childs nursery rhym for that curds and whey story you were trying to remember: Little Miss Muffet sat on her tuffet eatin her curs and whey...along came a spider and sat down beside her and frightened poor little Miss Muffet away. BTW cheers on the cheese!!!

@EDCblade Sure you can. The dairy in Durham, I forget the name, sells it in their retail store. We went there on the farm tour. They sell ice cream there too, very popular place on the weekends.

Could you please mention if the temperature is in C or F? Here in Europe we use C, in the US mostly F I learned, but not always, so sometimes I really don´t know which one it is. I recon this 200 degrees is in F?

working with dairy goats and making home made cheese, to give you an idea , you make the cheese out of the curds, also keep the whey, the whey is very useful in the fact of making whey bread. also you can make an excellent protein drink by mixing a milk powder base in the whey, such as strawberry, chocolate etc. love your videos Dave.

if you use cheesecloth/muslin cloth do a boil rinse on it before using it for food, if you want a more solid piece of paneer(cheese) press the cheese for an hour between two plates with a weight on top. Lemon juice will works good too, instead of vinegar.

I have a friend who works in Food Safety Authority in Norway, He says that as long as the cheese is vacuum packed in original factory embalarsje or covered with wax so that air can not reach, the cheese will get better the longer it is stored. add salt to the cheese and the cheese can be stored for several years.

@envirosponsible when i worked as a shepperd in the swiss alps, we used to give the whey to the hogs, they ABSOUTELY loved it! as far as i know it is quite a common practice. Also, as long as the whey is fresh, think you can drink it, it's rich in lactose, protein, vitamins and minerals. You can also use it to make othe by products as ricotta or brunoust (which is a traditional norvegian kind of cheese)

the best thing to do is get a tin like 2 or so inches in diameter and poke small holes in the bottom and depending on the size of the mouth of your tin get a dowel rod that justa little bit smaller than the mouth and rap the end in cloth and push the way out of the curds make sure the holes are no bigger than the tip of a pin. i use a a nail to dent the botton of the tin and then i take a pin and make a very small hole repeat 15 or so times works best with thin tin or other soft metals

I have 2 questions for you. Do you carry Aspren with you at all times for like headaches or pains?And does the top of the yurt have a hole for the stove or is there a opening circle theat lets it out?

Cool video. I remember hearing that you could make milk vodka by boiling milk, catching the steam onto a cover & letting it drip into a container. A double-boiler would work (like a Brunton cookset (Dave did a vid on those a while back). If you want it stronger, just boil it again. What do you do after you dip it in beeswax? How do you get it to be edible?

Dave, have you given any thought to stocking whole wheat berries and a small flour mill? 2000 year old whole wheat found in the pyramids was found to be still good for use. It seems right up your alley.

Thanks to you! This was so stimulating, i was just jumping into the Kitchen and test it. Works well! A Special clue: you can rub some Ash into the Bark of the Cheese. Tastes very fine!

Now i have a use for the big jug of distilled white vinegar that is in my kitchen. Have been practicing my hardtack recipe and this would go great on top of it. Only question is how to make cheese in shtf or in the bush without vinegar?

great video, if you use bees wax try to get capping bees wax less likely to crack for long term storage, that young man should have his own channel.

I see people are wondering about other uses for whey. I worked as a sanitary pipe welder/fitter at what used to be the worlds largest cheese plant. They would use the whey to coat dry dog food and they would forment it and turn it in to alcohol. They actually had an alcohol fueled power plant on site, and what they didn't use to power everything they had, they sold back to Southern California Edison.

Hey Dave I thought I would let everyone know that this will also work with reconstituted powdered milk as well. I have made some of this type of cheese with podered milk and it turned out pretty good. it is best to use podered whole milk but I have also made it with 2% podered milk.I saw on the coments where someone asked this so I just thought I would let everyone know in case you were not sure if it would work or not but it does.

May have already bee mentioned here, A good replacement for that vinegar is lemon juice. Also, the whey can be used in breads Just mix it 1/2 an 1/2 with water for a extra protein boost outta the breads Nother use for that 'cheese' is ta break the curds up into a fine mash, Throw a teaspoon of Baking soda into round a cup a water and stir the mash into this. an ya have a non-toxic water soluble glue.

There is a small town here in Scotland where they ferment the whey and turn it into a wine. It is one of the oddest things I have ever tasted.

as a kid we used a jar with only the cream from our hand milked cow and shook the jar about 15min to get a lump of butter ,,had to add salt to butter too ..But when we had too Much Milk we made farmers cheese useing the vinager just like this demo shows..I have never tried making cheese with store bought milk ,,only raw milk

You can use any acid, not just vinegar, i.e. lime juice, lemon juice etc. They add different flavors to the cheese. Raw milk is best for this, the fat is important.

That is the process of making ricotta. Although most Italians would use lemon juice instead of vinegar. You call it farmers cheese, I call it ricotta. Thanks for the video guys

In the winter I sometimes use 3 parts of vinegar and 1 part water. Spray your car windows before you go to bed at night...or when you are about to start your car. To get the ice off the windows. Just sharing that with you guys. Maybe it will help some this winter.

@tblbaby i completely agree that bigger bucks isn't always the way to go, i'm not a huge fan of taurus but i love their small 38s. i lean more to revolvers and dont really own any fancy guns but i do like well built no hassle guns like rugers as an example. i dont mind cheap but it absolutely has to work everytime but as you say its personal choice and honestly any gun is better than no gun and its cool as heck that your teaching the kiddo.

@MrMatt5252 whole milk for sure. And like another said below lemon juice is a more flavorful acid to use than vinegar. To take this to an aged cheese all u need is pressure and time. Lots of good books on the subject.

hi, i have used this method with powdered milk and evaporated milk in a can to make this cheese. its good on pizza and its cheap to make. add salt and mix before squeezing....

@rlmarin1968 Yes it will work with powdered milk I have done it before. whole powdered milk is better but I have done it with 2% as well. You reconstitute the milk with water as normal then do exactly like in the video. you can use either vinegar or lemon juice.the better you rinse it afterwards the less vinegar taste you get.

the whey is protein rich and can be slowly reduced even to the point of carmalization. you can ad cultured bacteria and age the whey in a cool clean area and have more yield from your milk.
