The recipe works. It took about 18 hrs for my yogurt to get tangy when left out on the counter, overnight. The brand I used ("Native", green can) got very thick when refrigerated (if anyone has every tried Siggy's Triple Cream yogurt - it's as thick as that). Consistency was little grainy but, overall, a perfect substitute for dairy yogurt. I tried another KZbinr's recipe for coconut which required more steps and arrowroot flower that did not turn out well. Joy's recipe is fast and I got the consistency I needed.

All coconuts are organic so don't be fooled with the word Organic. I am talking about fresh coconut. Coconut grow on very tall trees and the coconut water and flesh is found in the hard shell and covered with a thick husk. It's not easy to get it out. It cultures better with a bit of sugar, but it will culture some without. For Tangier yogurt with more bacteria, add a spoon or two of a sugar sweetner, like cane sugar, coconut sugar, honey, or maple syrup. It will also culture better if you heat the mix to 110° first, then add the probiotics.

Good day: found another hot health nut to stalk! I have been missing the lack of Chobani coconut greek yogurt stocked in the grocery (their best flavor along with lime). I did not think it was so easy to make. Also add coconut flakes, coconut sugar, etc, to this. I have been experiencing stomach problems too so I might get some of these probiotics (telling this is not in Google dictionary). They have one with 15 billion and other with 50 billion, and women's stuff which I do not need. Not sure of the difference other than strength?

Thanks! Questions 1.- does the yogurt come out a bit on the sour side? like regular yogurt? 2. if we don't want it creamy, can we use the coconut milk as-is? 3. What about health-wise? Does coconut not have high saturated fat that causes heart issues? Thanks again

Yes, it will be a bit sour-tasting because it's fermented. I think if you used the coconut milk as is, it might be too liquidy unless you're okay with that? A can of coconut milk on its own though doesn't have probiotic cultures in it. Coconut does contain saturated fat but its not to be feared. I have a blog post on it here which might explain it in greater depth for you: www.joyoushealth.com/15148-blog-saturated-fat-does-not-increase-the-risk-of-heart-disease

Thanks for posting this video. I made my first batch last week. Used 60% coconut milk, refrigerated it so it was quite thick. I used two probiotic capsules and left it for two days in the cupboard (approx temp 25 celcius). I turned out nicely. But then after putting it into the fridge, it became clumpy. I expected it to become thicker in the fridge because coconut tends to solidify when it cools, but the clumpiness is not as nice to eat as smooth coconut yogurt. Do you have any suggestions to correct this next time?

Hmm that's odd! I used Cha's Organics coconut milk so maybe that's the difference? It's super rich, thick and creamy! You could always strain it if it is too clumpy for your liking!

Thanks ever so much for sharing with us this good news.... using coconut milk. My problem is the starter. The probiotics you used is not available here in the Philippines. It is the plain unsweetened unflavored yogurt that I buy and use... with full cream cows milk.

That's okay, you can try any other brand with the same amount.

I make my own soy milk yogurt. For Christmas I was given a yogurt maker with 7 glass jars that have lids so I can put them right in the refrigerator pull them out as I want to.

Love your recipe. I was wondering if I can instead mix coconut milk with my regular fermented milk by kefir. Hope you reply soon to start experimenting.

Yes that would probably work! Let me know if it turns out.

Kefir uses a different strain of bacteria, so it doesn't thicken. Kefir in the cream like she does will still be very thick, kefir in coconut milk will stay thin. Still tasty, good for smoothies, but not a spoonable yogurt.

Maybe a silly question but does this have a strong coconut flavor? I don't particularly like coconut flavor but this looks delicious!
@joyoushealth5 жыл бұрын
Kristy Lee not a silly question but yes it’s about as coconut-y as coconut milk.
