I bought the Gladiator Series version. Love the knife. Feels good for an all around knife.

I thought about getting this just to have something unique. I settled on a few of their other more practical knives instead. Black Friday deals. Their 8” Phantom Chefs came with rust pitting on it. Their customer service is quite responsive, and they sent me a replacement knife. That knife also arrived with similar defects. Not sure what’s up with that? I’m a home chef, so $70.00 is high end for me. I have a couple of budget Mercers on order to have some beaters, learn about sharpening. I’m probably done with personal knife purchasing for quite a while. Might get some things for my mom. I dig your channel!

Thanks! I haven’t tried the phantom knives yet but the shogun/gladiator series have been fine for the most part. The gladiator cleaver I purchased had rust stains but I didn’t pursue a replacement (but should have). Mercer has great knives (the millennia line is the traditional beater) but it performs so well that it’s hard to justify (besides the price) abusing them over some other brands I’ve tried. There are definitely some in the arsenal the wife uses that ends up in the sink/dishwasher and they are an IKEA and Kuma. Thanks for watching and commenting!

JPM.Cuisine You’re very welcome. Other than the defects I mentioned, I actually really like the feel/performance of that Phantom Chefs. It’s really quite light, dexterous. I’m really looking forward to the Mercers. I’m sure that functionally they will perform as well as anything I have given my skill level. Looking back on the scary hand me down knives that I used for years, I’m like why? I wish I had known such discounts existed.

This knife is made for herb cutting parsley chopping etc , I do a lot of herb chopping for meal preparation so I think I’ll get one

I bought the herb rocker knife. I work as a cook. Looks aggressive and awesome! But difficult & awkward… to use in commercial kitchen. Slows me down. I had other cooks try it. Hoping to hear good feed back. Silence as they put it aside.

Not for trimming so much but definitely for cutting up steaks and parting out ribs, it works great. It’s a little short for long slices but they do make a much larger version of this knife.

The profile of the knife has almost a duck/goose in flight face, especially with a hook hole.

No. That would damage the blade. Treat it as you would a chefs knife.

I use it only on the ends of ribs where you might get a little bit of bone but I’m not using it on a chicken bone. However, Dalstrong has excellent customer service and if it chipped by mistake they may send you a replacement. Although I’m not 100% certain.

don't buy! the ones with a belly in the handle like the frost fires have no depth to the heel on the blade so you can't pinch grip them without your fingers crossing the edge which is sharpened and pointed (why do kitchen knife makers keep doing this), and try using it for more than half an hour continuously, DO NOT buy if your a prep chef unless you like hand cramps (good replacement for an every day! show me your knife roll, bet its not there), nice "cleaver" with no flat cleaving edge, its rocker curved the whole length (duh) and blade rocks all the way to the handle to so you keep wacking your knuckles great for herbs and fine mincing like a "chefs knife" that this is meant to be a hybrid of, they took the best parts of a chefs knife and a cleaver and threw them out and designed a blade that is unusable for what they say it is, try "cleaving" something like hard root veg when you have to use your weight on the blade or split a chicken sternum (bye bye knuckles) if your looking for a herb rocker that you have to over grip buy a herb rocker they are cheaper, I guess it looks nice hanging from the dumb ass hole (lol) guarantee your not using this as a daily like you said an honest review for any one thinking about buying one (o and be prepared for the pins sheaths and fancy packaging you get from dalstrong they put lots of money presenting their knifes, i wish they would put it into practical design and quality control, but they dont manufacture or supply they outsource what can you expect)

@rustytr yea...don't listen. 😂 I have a Vahalla Chef. I take to work and it's perfect. It rocks good. Very fast. Comments are hit and miss even with Wusthoff and Shun etc. 🤷 Go with what feels good.

@@JPMCuisine just look at the shape. It's too short to be a scimitar and it's too much belly to be a chef knife. Way too awkward in design to be useful.

I used it, it cut and it felt really good. A nice cross between a vegetable cleaver and chef knife. Try it out!
