Since his TV interview in 1988, many other top economists have latched onto the 2% target for the reasons that you mentioned. It's not magical, but it makes things predictable and steady. Using the "rule of 72," a 2% inflation rate would mean that a currency would lose half of its value over 36 years, where a 6% inflation rate would mean it would halve in just 12 years.
