They weren’t perfect but honestly, no tamal is perfect. You did a great job for someone who has never made them. No ones abuela is born with the knowledge of making several dozens of perfect tamales. They take years of practice.

This is the reason that when your abuela makes tamales, she makes enough to feed the whole damn town. It's labor intensive af but you can make a day of it and then have enough for the family, sell some to the neighbors, and freeze whatever's left.

I make a ton of them, eat a ton, give some away and sell the rest..:D We used to all sit around the table and make them. I miss those days so much. I actually bought some stuff to make tamales. I just need the meat. I also want to make the sweet ones. I've been craving them a lot lately. :)

I remember when I was a kid my grandma and aunt would buy produce by the bushel from boon dock roadside stalls, then we'd all gather in the dining room shelling purple hull peas or whatever was on the menu for the night. And yeah, every time we dropped one we made the joke "I pea'd on the floor"

every year, my family has a “tamale party” in the middle of december. family and friends alike come over and we make them assembly line style, for the entire day. it’s a labor of love, but in the end we end up with about 50 dozen tamales, everyone taking gallon bags full home to eat and freeze to have throughout the year. it’s such a special time, and i’m so happy you’re giving love to a food that gives me such comfort (:

tamales are difficult to make!! you did a really good job! a few tips are-- spread the masa on the husk thin, put in the filling, then fold it over so the filling is inside and use strips of corn husk to tie the bundles together so they won't open! keep on trying with new flavors! you got this! :)

Hey Julien! Great first try!! It's kinda hard to make when you don't have someone there teaching you. Next time put the maza wider on the corn husk, put the filling in the middle, and then a little more maza on top. Then fold one long side in, then the bottom wide side in, and then the other top wide side down, and then the longer side. You can also leave the top open. To hold the corn husks closed better, either peel a couple thin lines of corn husks like you did by accident and use it to tie it closed or get non dyed string. When my family and I steam them in the pot, we put them in standing up long ways around the pot. Usually cooks 10 to 12 at a time depending on the size of the pot. You don't want to stack them cause the seam won't go through all of them correctly to get that moist softness. Also if you want to make it spicy, there are some amazing smoked rojo chili sauces out there. You can put a spoonful in the middle with the filling and/or leave it as a "dip" or topper when you peel them and eat them. Love your videos!!! Your friendly dink, datboywiththepurplehair!❤

I watch all of these other cooking shows and I feel so incapable of creating the recipes because the chef is so professional. Julien makes me feel like I can do anything and I love that. I binge watch his videos and am seriously considering going vegan because of them.

When people get so excited talking about their traditions and celebrations or cooking with their family their excitement is infectious, and I feel like the only rational response to that is to also get excited and to ask if you could be a part of it. Tamales look so frickin delicious. My grandpa and his family left Russia and Germany in ww2 and when he came to Canada he was ashamed of his culture because of the atrocities that had been committed. When he was older he started to make more of the food he had growing up. He passed away when I was little, but we still have days where my family makes homemade pierogis, borscht, fish head soup, sauerkraut, cabbage rolls, and sausages.

Great first attempt! Tips from someone who has made tamales every year since I was born (35 years) - hot liquid in the masa helps the oil stay melted, for my vegetarian sister we use Crisco which is just vegetable oil. The masa should be more like soft peanut butter and you spread it like you would on a sandwich. Make sure you look for the correct side of the husk, one is smoother and will make sure your tamales slide off the husk when cooked. My family only folds the bottom and steams them bottom down. The beans should placed in the middle after you spread the masa so when you wrap it the beans will be covered. Try a slice of roasted green chili, a spoon of canned corn and cheese wrapped inside. Also get helpers! It makes it so much easier and more fun.

hi! as a mexican vegan i really recommend giving sweet tamales a try. They're the only vegan option at christmas dinner with my family, haha. They usually have no filling, you just add sugar to the masa mixture and usually some sweet chopped fruit like pineapple or cranberry and cinnamon.

Hey, Julien. I wanted to give you a heads up that some canned refried beans have lard in them. This brand uses pork lard. I learned this lesson the hard way, myself. :( Look for refried beans that have other oils or oil free, and you should be safe. :)

This is important, even for those who aren't vegan. My mom's side of the family is Jewish, but not strictly kosher. We don't eat pork though, and we found out years after eating refried beans that the majority of them have pork lard. Now we just make our own.

Yep. Pork lard is a common seasoning for many Mexican foods. 😕 While I’m not vegan/vegetarian or Jewish...I have a condition called Exocrine Pancreatic Insufficiency(EPI) which means my pancreas no longer produces ANY digestive enzymes. Which are what your body requires to breakdown any & ALL carbs, protein & fat. So since lard is just pure fat...even with prescription replacement enzymes (which ironically come from pigs) I have to be VERY careful how much fat is in any food I eat if I don’t want to get extremely sick & risk triggering an episode of pancreatitis. 😕 Plus protein is really hard to digest as well. Especially animal protein. Thus I’ve actually ended up eating a lot of vegetarian dishes and substitutes as they are easier for me to digest. But...corn in ANY form is VERY difficult to digest so a lot of recipes like this...along with a lot of Mexican food...is now off limits. Which absolutely SUCKS as I LOVE Mexican food & corn in general. 😭😭

I'm glad that you've found alternatives in the meantime. Since you mentioned you have trouble with carbs, fats, and proteins, would you be able to make a tortilla with an alternative like defatted almond flour?

@@shannonbrown2392 My dad just recently joined the vegan train with me, but before that he was kosher for a few years and didn't know about the lard in refried beans either. :( It's easier being kosher while vegan because all vegan food is kosher (that I know of anyway), so he's enjoying that aspect. :)

@@elduhh i think "tamales de frijol" are like that, at least in Oaxaca seems to be like that. Other kind of tamales as mole, verde, rajas, etc. are enclosing the filling.

I showed my grandma this n for sum reason she got happy n said “Mija can you ask if he will help me make some this year” guys.. my grandma makes 175 dozen tamales a year... starts from Halloween till thanksgiving we eat about 25 dozen then till Christmas we have all the rest to eat ... it was my 18th bday last month on the 25th.. I had a tamale party bc we still have some left over 🤣

the filling is supposed to be inside of the maza, so you would’ve had to spread the maza out more to the edges so that when you put the filling on top and fold the tamale the filling will eventually end up wrapped inside the maza but overall you nailed the consistency of the maza ! they look great. Also you should try making tamales de raja, you’ll love them !!

Ninjanova i didn‘t know about humitas! i love the name it’s so cute :) we do have a sweet version in mexico but we just call them tamales dulces. sometimes with tiny pieces of fruit or raisins but always with sweetened or even fruit-flavoured masa. street vendors often have both sweet and salty tamales and then put food coloring in the sweet ones to make them more dessert like 😋

In Chile we eat humitas, they are made of corn and the don’t have fillings, we eat them with sugar, tomatos or both. Super yummy and most people here like it!

Tamales aren't a one shot thing. They often get taught over years by family. The masa should get spread thinly with the back of a spoon across the bottom half to 3/4 of the husk. Filling placed in the middle then one side folded over the filling and then the other side folded on top of it. I think your recipe had too much liquid versus oil and butter and we usually add adobo sauce to flavor the masa. I'd recommend watching people assemble tamales and remember tamales are a process, it'll take a lot of tries to develop a really good replica.

I've helped my mom make tamales my whole life and I still wouldn't attempt to make them on my own. It's a long and tedious process for sure! That's why when my family makes tamales, we make enough to last WEEKS! 😂

This is giving me flashbacks to my mom yelling at me when I don't make a good tamale 😂😂😩. Some tips if you when to remake them: If you want to make the traditional tamales you want to spread the masa to each side of the leaf (left & right) and it to be thin but not too thin. Because when you fold the tamale it will encase the filling and keep it from leaking out of the tamale while cooking it. Also the thicker the masa the longer the cooking time will be! Personally I love tamales de rajas (when there are no rojos) they are simply made with slices of jalapenos and melting cheese, it's sooo yummy. We also make plain tamales, they are smaller and triangle shaped, we pair them with crema (sour cream) and salsa.

You should try making French crepes! In my family my dad is gluten free so all our recipes don’t contain gluten. Here’s the recipe if anyone wants :) 3/4 L milk 3 eggs 3tbs oil 300 g flour and a tsp of vanilla (optional) Put the pan on medium heat Drop about a ladle-full of batter and spread it around Once it’s brown on the rim, flip it over Cool it on that side until it is as gooey/uniform as you want (Edit) make sure to add some oil b4 putting the batter in the pan :D

I love crepes. The best crepes are made with about 50% malt liquor beer. It really gives them a great malty almost homemade milkshake type of taste.

I commented on your pozole video about how happy it makes me that you're making Mexican recipes!!! You don't see many big youtubers try/make authentic foods that other cultures grew up eating. IDK if that makes sense but thank you Julien for this awesome video made my day :)

Vegan tamales idea below! You did a good job! I’m Mexican and I was just thinking about what I would do if I had to make tamales without having grown up making them. And I wouldn’t know where to start lol. My friends and I often make vegan tamales and we’ve gotten really good at it! We normally use shortening as our Manteca substitute but I am going to try your idea of using coconut oil and butter the next time I try them. For the filling having something moist is really helpful. We normally make a green tomatillo sauce and cook veggies and canned chick peas in it. The mixture gets all soft and it is delicious incide the tamales (and even outside!). when you are assembling make sure to spread the masa out before adding the filling. You want the filling to be encased in masa or else If you have a more saucy filling it will run out as you’re cooking them. Another of my fav vegan fillings is Chile slices (like the Chile’s you use for Chiles rellenos) and cheese! They’re so tasty. The key is having a fatty masa and using a very flavorful filling.

there’s a market near me where they sell premade masa dough and they have a vegan kind (which uses shortening). my grandma found it so we could make tamales together after i went vegan a couple years ago 😁 she made her red mole but made half of it vegan for me and we mixed it with black beans and corn for the filling. It’s super simple and delicious. we also made some sweet tamales with the vegan masa filled with dried fruit they were super yummy. and then for christmas this year my brother made me vegan tamales filled with butternut squash, beans and mole which was also really good 👌🏼
