do all my stuff in guitar pro because its so easy and I'm pretty fast with it. Took like an hour and a half, maybe two hours to sit down figure out everything and write it all out. I don't even know what other programs exist for making tabs. I don't really know how to explain how to start writing...i just go moment by moment, figuring out what comes next and typing it in the program...if thats understandable. Sometimes I tab out melody first then figure out where to place chords.
