I have been growing yacon for a couple of years but I have only ever roasted it in the oven so very impressed with what you are doing. Got me wondering now if it can be made into Yacon wine ! Yum.

Yacon UK I had no idea it was a prebiotic, that's really interesting, Yacon definitely on my list to give a go, I've never tasted it. And the colour of your compost, wow! I've noticed on Plot 2 where I just covered it with woodchip last year, it's already paying off. The ground is less compacted and claggy so hoping for a great season

Yacon UK. Love that little press, we have a bigger Vigo one but as you say it's a bit of a faff to get out, use and clean. We tend to just use it when we have tons of apples in autumn. We grew Yacon a few years ago but I didn't manage to keep any rhizomes for the next year so I'm definitely planning to have another go, especially now that I want to taste Dan's Yacon milk!

You'll LOVE it Paul - its such a great plant and its like having a Winter fruit, where you harvest from about Nov until now... crisp like an apple, but more savoury ... can be eaten raw or cooked ... whats not to love!!! 💚

Hi you two and Yacon U.K. now am I right there is a purple yacon as well is it any different and can you use yacon like potatoes to break up the ground before putting putting on compost and wood chips

Hi Stuart, Yes there is a Purple Yacon as way I think, there are a few different varieties, but can be hard to find, we have a red variety too ... think its called Morado and its a bit sweeter and eariler, but doesn;t crop so big maybe. Yes you could use it to break ground, although harvesting the tubers would be difficult, they snap quite easily. They grow well for us in as loose a soil as possible - Have added you to our list too 👍✌️🌿

Hi Rhian. Yes, its acutally a good thing, especially if they are young plants! Our biggest plants this year have been the ones we never harvested last year. And some people do say its best not to harvest until year 2. Popped your name down - be drawing in next few days 💚✌️🌿

I just planted my yacon rhizomes for the second time. I live in Norway so I must store the rhizomes indoors and cool during winter. I enjoy to slices the yacon like apple and dry it. During winter I have two slices in hot water, drink the water and eat the now soft yacon. The first year I had two small rizomes, so I am anticipating a bigger harvest this year. Perhaps I can try yacon juice.❤ I love yacon. Have you tried to eat the leaves? I read you can make tea of them and I believe you can eat them like spinach.

So glad to hear you are enjoying Yacon - we love it just like Apple too 💚 Love the sound of your Yacon drink too - I will have to try this! I expect your harvest will be much bigger now if you Rhizomes are bigger. Once you are happy with the harvest you can divide the Rhizomesto make more plants. YaconUK - Wow, that looks yummy. Having made the yacon syrup before I'd be lucky to make one bottle of syrup once that lot has reduced down but it is lovely and caramelly! 😂 Murph stealing the show on this one❤

Great questions Nneka, The only reason we didn;t was because we weren't organised enough to harvest the Yacon ahead of time ... and also because the water content is probably higher when fresher ... we did actually mean to press a couple of tubers from our previous harvest that we still had left and compare it ... but in the excitment of it all, we completely forgot!!! 🤣 And then it literally started raining within minutes of us tasting it, so we had to pack up fast, otherwise we may of remembered and added it in ! It will give us a good comparison to do next time though 💚✌️🌿

It was suprisingly sweet though anyway .... I think at this end of the growing season the tubers seem to be naturally sweeter too ... we noticed that when we did our previous harvest a week or so ago 👍
