Very juicy lamb shoulder, wonderful sauce and garnish, all cooked at the same time.
The meat I use is with excellent quality. It weighs 1.7 kg, and bakes it for 30 minutes at 200 degrees, 1:30 minutes at 160 degrees and 20 minutes at 200 degrees for a crispy crust. If the meat is larger than 2 kg, increase the cooking time to 160 degrees at least 2 hours, if you weigh more than 3 kg, you should increase the roasting to 160 degrees at 3- 3:30 hours. You should also increase the marinade products for larger quantities.
Ingredients:
Lamb quarter - 1 pc.
For the marinade
2 cloves garlic
2 sprigs of fresh rosemary
80 ml of oil
juice of 1/4 lemon
2 tsp paprika
1 1/2 tsp peppercorns
3 tbsp. olive oil (may not be added if you do not like its taste)
2 tsp sol
For the garnish
1.5 kg of fresh potatoes
2 carrots
1 head of fresh garlic (maybe old)
salt, pepper, olive oil to taste
1 1/2 cups water
