I’ve been Executive chef for over 15 plus years and have trained staff at many locations Over the years . I have seen some stuff👀 I don’t know about the restaurant locations you’ve been at neither can I speak for them but I have seen some stuff 👁. It’s amazing to see how many places get smacked with hefty fines by food tech for not following the simplest of rules. It literally says in the recipe books for step one Rinse Seafood and Poultry, the only meat that isn’t rinsed is the steak cuts that come pre cut and pre packaged. Now whether the employees choose to follow this step I can’t vouch for because you can’t see what every employee is doing or not doing but they are supposed to . I agree with the patrons not worrying about behind the scenes part and that’s the crazy part.

I just cut an inch off the bottom of asparagus. If it's still tough, I'll take it out my mouth lol. That's my tactic! Lol I'll always was my chicken. I wash all my meat, except ground. I don't need to wash beef. I usually don't wash steak. I will always wash pork though, and soak it. Sometime depending on what I'm cooking, I'll boil it for 5 minutes, rinse it, and then cook it. Except ground, ground gets cooked not cleaned.

I love asparagus... short life though, spring into very early summer, (2-3 weeks, once picked) other than that, the stem is woody... if I see asparagus in mid summer, or early winter... I walk past it... it's not good... people need to learn to eat seasonal... every vegetable has it's season.
