Hello, I am of Chinese (Guangdong in southern China) ethnicity living in Canada. A handful of dried red dates (Jujubes) have traditionally been considered a complement to savoury homemade soups. The ingredients for a Red Dates drink (touted as a herbal beverage) are generally, water, red dates, dried Longans (Dragon's eyes) and some Goji berries (optional). Crushed fresh ginger will allow the flavour from the ginger to infuse into the liquid, brightening up the taste. You have added a huge amount of fresh ginger, although, if you had crushed maybe just 4 chunks of fresh ginger (similar to how cooks crush cloves of garlic), the ginger flavour will seep into the liquid. As for the ratio of red dates to water, a soup will require a higher ratio of water, whereas when stewing or braising, less liquid is needed. Recipes handed down the generations never specified ratios, one is supposed to gauge from experience, or, through trial and error. Finally, there is absolutely no need to simmer the liquid for 4 hours. Between 1.0 to 1.5 hours simmered is plenty. One cooking tip though, don't lift the lid after turning off the heat. In order to economize on cooking fuel, Chinese mothers have traditionally "trapped" the heat inside the covered pot to extend the cooking process.

I find that the best jujubes for fresh eating should be about half red half green, anything less ripe should be used for pickling, etc. When they are mostly green they are imo not very good. There are hundreds of varieties of the Chinese variety (Ziziphus zizyphus), some are fantastic fresh, some are way better dried. The indian type you mentioned is a different species, Ziziphus mauritiana, and there are also hundreds of varieties. The best fresh jujubes I've ever had have been way better than any apple I've eaten, but unfortunately almost no one picks them at their peak ripeness so unless you grow your own it's difficult to enjoy the best jujubes. Source: I grow many varieties of jujube trees, have my MS in Horticulture, and am obsessed with Jujubes. Also, while I am not asian, I live in an area of the Texas Panhandle with a large asian community, and most families have one if not many jujube trees. The town is littered with jujube trees! I highly recommend trying to find some of the better varieties, Honey Jar is one of my favorite, as is Sugar Cane.

+undergreyforest Thanks for the insight about jujubes. That seems to be the case with so many fruits; getting them fresh off the tree gives a much better flavor. I agree with you about getting them when they are in between being white and red, they have a nice balance of taste and texture that way. I'll try and track down more varieties in the future.

I just got a Li tree. I have not had the opportunity to try the fruit. I am in Texas as well, about 40 miles NW of Houston. I am excited because of the versatility of the fruit for picking---from less ripe to dried, longer harvest period, nutritional value, and of course the drought and disease and pest tolerance. Some healthy ease, and just hoping I really like it. I do hope it does well in the humidity we get in this part of Texas. How do you think it compares to the other varieties that you grow, taste-wise?

i mom told me the same about the ripeness “a little bit brown, but not too much or dry” -probably her words exactly she also said pick them before the animals and bugs get them and let them ripen somewhere safe (a bag lol). as a teen we had so many different trees and shrubs and any ripe fruit was eaten by birds, squirrels, ants, stray uncle…we had to pick early

I have grown 'Li' and "Lang' jujube cultivars. You need two different cultivars to get decent fruit set. These jujubes have a brown skin when ripe. To me they tasted like apples with a marshmallow overtone. I dried some but I sliced them thinly and sprinkled cinnamon on them to make jujube chips and they were tasty. The stale taste you are getting must be from the addition of sulfates which is a preservative and keeps the flesh from turning brown. The jujube flowers are very fragrant and they are pollinated by small wasps. The trees are gorgeous with glossy leaves that sparkle in the desert sun but wickedly thorny. It would make an ideal barrier plant. In Boise, ID you can't get fresh jujube fruit so I brought half of my first crop to the only Chinese grocery in town for the clerk to give to her mother. I also gave the clerk a catalog so she could order the trees for herself. Jujubes must be very special to the Chinese because the clerk burst into tears and thanked me profusely. I have a sister who just loves jujubes and was urging me to plant some and grow them for her.

You must be talking about the one on Cole and Ustick! I’m actually heading there now to see if maybe they have some now that they sell. I’ve been wanting to plant one but want to make sure I actually like them first.

@@kevin.malone If you plant jujubes you need to plant two varieties to get good fruit set. Jujubes grow very quickly and love the conditions in that area. Don't plant them near a sidewalk! They are quite thorny. My trees were in Meridian. I sold my home and moved from there to Boise to get a 2nd degree. Sadly, the new owner cut down all my fruit trees and shrubs and then ripped out all the gardens. I had a small mint garden, a shade garden, a purple garden, an iris garden and over 200 ft. of border planted with flowering plants, fruiting trees/shrubs and herbs. I also had two eucalyptus neglecta trees I planted that were so beautiful. The replacement was grass and cobblestones. It was heartbreaking to see that happen.

That’s so sad. Grass lawns are such a waste. I’m hoping to start growing more food soon, so for now I’m trying to plan out as much as possible.

I will share a recipe for making Korean ginseng tea that calls for jujube. I learned this from a Korean market owner. He used an enormous brass kettle, but I used a crock pot: One pound of dried jujube dates. I halved them before cooking. One pound of dried white chestnuts. One box of six year old Korean red ginseng. The last one is expensive. 30 years ago it was $60. The box contained six whole, dried ginseng roots. Put the ingredients into a crock pot, fill with water, and cook overnight. Your home will fill with a most delicious aroma, and it tastes heavenly. The Koreans take ginseng very seriously, they even regulate it, and every ginseng product has a stamp with a grade on it.

Mmm...Try it next time with 2 parts grated ginger, 1 part grated turmeric and a squeeze of honey! Even more medicinal and DELICIOUS!

To anyone else making the tea, wash and soak them. You you can mash them up with a hand held blender (remove pits first) and then cook. That way it is much faster, nowhere near 4 hours. You can also turn off the heat once you see it has turned soft cooked mush and just leave the lid on. Other things to add are goji berries, chrstyanthemum flowers, ostmanthus flowers and dried longan. Ginger and cinnamon are great to add. I'd add some muscovado sugar to sweeten.

I had one of those red plum type trees in my yard, a Chinese friend told me it's called Huong Tao . She dries them and puts them in soups and other things, although she never told me what 'the other things' were. The trees are very invasive and send runners to grow more trees and the trunk is a very hard wood . Too bad they're not delicious!! lol

These are awesome, i had a tree in my yard at my old place, the Indian variety, but the mining company polluted the soil and it stopped growing fruit and died. I moved to somewhere where that won't happen again and i want to grow another tree.

In Asia, different jujube varieties are used for drying, pickling, eating fresh, making wine, etc. There are said to be over 400 cultivars grown in China alone. Some sources claim that the reason jujubes are not more popular in the United States is that the cultivars originally introduced here were not ones meant for fresh eating, so people got a bad first impression of their eating qualities.

Excellent video. I am a fan of jujube, but use it as a fruit for cooking. My air drying never works out, there must be some trick to it. Wife calls it "the fruit trying to be an apple." Texture and flavor not great for fresh eating, except for a couple small varieties like Sugarcane which aren't commonly found.

I love the dried ones--I think they're like a caramel-y mashmallow crossed with a dried apple. I get them with the pits in... like the regular dates, the flavor and texture is better than when they are pitted. They get too dry with the pits removed.

i used to eat hawthorn candy as a kid at my grandmas place (300 miles away). from little kid to adult every visit i ate all those candies. theyre like ground and compressed into discs and packed like a roll of coins ps: theyre called haw flakes. some brands have food dyes banned in us eu or eu/us

There is a species endemic to the Florida scrub that is endangered (as is the scrub ecosystem), Ziziphus celata. I worked at the Archbold Biological Station for a few years and have tasted the fruit, but I can’t remember much about it. If you’ve tasted all of the other fruit in the world maybe it would be worth going after for completeness :)

I've had green ones like you tried in the video and agree that they aren't very tasty. My wife brings them home from Chinatown and they are a bit spongy/mealy. But, when I started growing them (figuring that at least my wife would like them), I found out that they can be very good and are now one of my favorite fruits (though Lychees and Sweet cherries are better). The ones from Chinatown were 10-12 brix (percent sugar....I use a refractometer), while the ones I grow are 22-30 brix. To put that in context, most grocery store apples are in the 12-14 brix range, though some of the newer varieties are a bit more (I found a SweeTango with 20 brix). The highest brix I've ever seen in an apple was 23 and I'm growing dozens of kinds and have sampled way more. Jujubes are especially good if you've had some wet weather near maturity. It is a bit of a catch 22, as they need lots of sun to set fruit, but taste better when there is a decent amount of rain. So, Sugar Cane, and especially Honey Jar are very good varieties.

In Uzbekistan we have small velvety jujube and big jujube .we eat only dry jujubes (jida).they r too tasty ,my favorite dry fruit . I didn't even know that Ber fruit in India is the same jujube we eat in dry version ,they never sell fresh jujubes in Uzbekistan)), and in India I still have never seen my fav dry sweet caky flavored jujubes )))),

Jujubes! I live in France and we have Jujube trees growing in the wilds in some regions of the south, close to mountainous areas. But we were never told it could be eaten "fresh" we usually let them ripen on the tree, in the sunlight, then pick 'em. But they're the small type, very sweet and Date like if you let them do that. That crunch when it's ripe tho

Thank you for sharing. I have had the pleasure of finding a Jujube orchard gone wild in Central Texas. The trees are loaded with the fruit. I can trace these to a program started in the Early 1900's to plant Jujube all over the States. Department of Agriculture was pushing them to be planted.

Jujubes if watered occasionally do really well in high desert and desert conditions. The tree is very pretty with dark glossy leaves. Watch out for the thorns!

Here in mexico we call them "Manzanitas" as well "Jujubes" but the pronunciation is "Huhubes", not "yuyubes" they can be pretty bland if they are not ripen properly, the red ones are dryier but sweeter, I think the best way to describe it would be like a juiceless sweet/sour apple, they taste pretty good and they can be found all around the north part of Mexico.

In Guyana, we call this dunks/ dongs and never knew we could do a lot with this !!! We have three different types , the small ones are yummy and crisp, the large green ones can be eaten ,large red ones are ripe are slimy to taste. We just ate them, no one particularly like them. The trees are tall and has thorns so be careful of you ever try to climb one. Get a stick and throw it up and they will fall. The medium ones are flatish and taste like sponge. Apparently, it contains shellac for golf.

When brown and very wrinkled but still fresh and not dried like in that package, they become more chewy with a flavor that tastes like a blend of mild apples and dates. I enjoy them quite a bit.

I just purchased the Golden Spoon brand of jujube's in honey. I tried it as a cold tea, and boy was it delicious! Those red jujube's are sweeter than an apple. I enjoyed your review.

There is a world of difference between market fruit and home grown. Mine are sweet crisp and refreshing. Also note that this very cold tolerant, can tolerate minus 28° F and suitable to grow in many climates.

It was funny to hear you saying hawthorn is rare. I know you mean it as it's not a cultivated fruit in the West and you don't find it fresh in any market. But ironically in many parts of Europe it's one of the most common trees/shrubs in the landscape. In the UK a North American hawthorn (cockspur thorn) is commonly used as ornamental, I used to pick its fruits in parks because they're much larger than our european hawthorns. There's quite a lot of folklore around hawthorn in Europe, specially in Celtic people. And there's a lot of tradition of using the fruit (which is rich in pectin), being very popular with modern foragers, including for fruit leathers similar to the chinese sweets. Good video as always!

I personally think this is one of those fruits that taste best when they look like they've spoiled. The only ones I've enjoyed are the ones that are fully brown/red, a little shriveled and wrinkley. The fully green ones taste more like a vegetable to me. The half green/half red are still way too mealy tasting and dry. Overripe slightly shriveled ones were soft, moist, and very sweet.

The Jujube has various cultivars, the Jujube is also called the Chinese Winter Date & in Brunei & Malaysia it is known as 'Bidara'.

Leave them out till they shrivel and they become sticky. I like Hawthorne I've had Hawthorne flakes which are not really a flake and considered almost a candy. My Korean friend cooks with jujube quite often.

Jujube, or žižola, grow here in Slovenia, but only on the coast. I have a spiky bush in front of my house, as do all my neighbours. They have small brown fruit, like an olive, and taste like an apple when fresh, but sweeter when old and wrinkled. They also make a kind of grappa called žižola, and there is even a bar in the seaside town of Piran named after the drink.

There are a lots of varieties and they have greatly varied flavors, from flat, to tart to sweet to delicious. Different ones are adapted to different climates. Those that do well in the mild Pacific climate of California have no flavor if grown in the heat of Texas.

Jared, thanks for reviewing these, I actually grew up around these as a friend of the family had one planted in their back yard, so I never quite considered them "exotic". Much like yourself, I am not .. overly fond of them, but honestly had never tried it as a tea (this was actually in the dark ages before the Internet, when if you wanted to learn about something that was not part of the standard curriculum you had to find it the old fashioned way with the Library and that Dewey Decimal system which to this day still confuses the crap out of me! but I digress...) I have always compared the unripe white ones to an apple that has become over-ripe or past prime and has taken on a mealy texture, but I may revisit them as alternatives, or as an additive to mulled cider. Would you happen to have tried the dried fruit prepared as candy ? Great video, as always!

Oh really? They are quite rare, so worthy of a video. But mediocre on all other fronts. I do believe I've had them candied at some point. still unremarkable, like a bland Apple flavor. Adding even the dry ones to a cider would work well though. Dull as they are on their own, I still think it would bring in a more complex flavor if paired with other fruits.

I have 2 different types of jujube trees in my yard. I live in zone 7 and they do well here. What to do with them, that is the question? The birds dont relish them, they eat our apples and almost leave them untouched. I found them much as you described. The rounder ones taste better than the elongated ones, the birds also prefer them. I have tried many different ways to use them. One of our favorite ways is to cook them like plantains, remove the seed which is time consuming, then I fried them in a bit of coconut oil. Do I love them? no, apples are far better and only when they are mostly dry are they sumilarish to an actual date. Given the choice between a date and a jujube I'd take the date hands down. Loved you presentation and you are spot on. 😊

You can let them dry on the tree to become "red dates" or harvest them when ripe to eat fresh. I have dried slices of jujube with cinnamon sprinkled on it. that was tasty. If you have more ripe jujubes than you know what to do with give them to an Asian person or bring them in to work for people to try. I did that once and the clerk at the Asian market burst into tears. She hadn't had a fresh jujube in years! I also gave her a fruit tree catalog so she could buy some trees for herself. Among the Asian community giving quality fresh fruit as a gift is a time honored tradition. Asians visiting their relatives in hospitals bring mandarin oranges for them to eat.

My dog searches for fallen(and probably fermented) fruits every morning. They grow in Phoenix without ever being watered. Kinda invasive. They send shoots up from runner roots.

You should try the Mediterranean version of the jujube. It’s the size of an olive and way more flavorful compared to the Chinese version.

Maybe some bitter compounds settled to the bottom when you chilled the tea, leaving a more flavorful/less nasty elixir

There are over 400 varieties of jujube in China and the few we have in the U.S. are not that great. They are rarely picked at the correct ripeness or time of day. Eating that fruit was like comparing a crab apple to a sweet variety. A Sugar Cane or Honey Jar jujube is much better. Some are very juicy and sweeter than the sweetest apple. Hopefully markets will start carrying the good ones soon.

Using whole dried jujube's with the pit in them makes a much better tea; good hot or cold! You just put a slit in them before you put them in the pot. Don't use the pieces.

Re: Ep. 71. Dunno when you'll be back in the Pacific NW again, but Washington Park Arboretum has a nice big fruiting Medlar tree. Go in like Jan/Feb when they've rotted on the ground a bit. ;)

Have you ever considered trying to grow your own fruit? You can easily do it in a pot inside your apartment. I have videos that relate to that, if it interests you at all. Cool video, and I strongly suggest trying to grow in containers. I am doing so with great success here in New England.

+The Awesome Tropical Germinator I have considered it! Its a little tricky for me because I travel so much and have very limited space. I think I may try growing some berries or something else that is very low maintenance that doesn't take much room. I'll check out your videos :)

in our country you can find many varieties of jujube fruit....... in our country almost everywhere you cane see the jujube tree, in house ,in rood everywhere....... but every jujube tree fruit taste differently for some reason.... i don't know why that happens......🙄 but we love that fruit.......🥰🥰🥰

I grew a tree with medium sized brown fruit. It grew amazingly fast and had one of the most aggressive root systems I've known. I would have kept it, but it attracted fruit flies out of nowhere (idiot govt here takes no measures, so they cost millions). If you find a fruit before it's infested, it's delicious - sweet, caramel fruit with no acidity. Ended up ripping out the tree and was dighinb up root suckers for a year.

I enjoy your videos. . You might want to look more into how Chinese people deal with jujubes, cooking times/methods, etc. Your cooking times might be too long. There seems to be a variation in the quality of dried jujubes. I've never seen halved ones before. Jujubes taste ok if you get decent ones and cook them right. They are good for vitality. . Are they pronounced that way? I thought it was different?

thnx for sharing...but its too much work.. jus buy the ready made one ..they sell it at China town in bottles for $8.00...(Jujube Tea)or you can find them in any Asian Food market....jus add 2 or 3 tea spoon in a hot cup of water..no sugar needed.. try it out its good..

In my opinion, jujube tastes best when they are fresh off the tree. Northern Asians dry this fruit as a food supply for winter in old times, because of its high sugar percentage.

My stewed prunes are not stale tasting and the raisins I put in my rice pudding are not stale tasting. All of the dried fruits I use in my Christmas cakes are not stale tasting.
