Christmas fruit cake
Ingredients:
1/2 cup cashews
1/2 cup raisins
1/2 cup walnuts
1/2 cup almonds
1/2 cup seedless dates
1&1/2 cup all purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1 pinch of salt
1/2 teaspoon clove powder
1 teaspoon cinnamon- nutmeg powder
1/2 cup granulated sugar
100 gm granulated sugar / brown sugar
100 gm unsalted butter
2-3 eggs(for eggless add 1 tablespoon white vinegar)
1/2 cup orange juice
1/2 cup red wine/ rum
1 teaspoon grated ginger
1 teaspoon vanilla extract
Recipe:
Add all dry fruits except almonds in a bowl. Add orange juice and wine. If you want the cake without alcohol then double the amount of orange juice. Add ginger and nutmeg cinnamon powder. Mix it well and keep it airtight in refrigerator for maximum 1 week. I have soaked it for 2 days.
Make the caramel:
Add 1/2 cup sugar in a heavy bottomed pan and put it on high flame. After few minutes it will start melting. When it starts bubbling add 1/2 cup of water and boil it for few seconds. The caramel syrup is ready. Cool it completely before use.
Cake batter:
Take out the soaked fruits and use a strainer to separate the excess juice. Then take them out on a plate and add almonds ,flour, baking powder and soda. Mix it well.
in a bowl add sugar and butter and whisk together to get a smooth and fluffy butter. Add eggs and mix them well. Add vanilla extract, salt. Add flour fruit mixture gently. Then add caramel syrup and if needed add the excess juice. If you want it without eggs then add vinegar at this time. Preheat oven on 320 degrees Fahrenheit or 160-170 degrees Celsius for 10 minutes. Set butter paper on cake mould and pour the batter in it. Garnish as you wish. Bake the cake for 60-90 mins. Enjoy the fruit cake.
