Koorkka Mezhukupuratty /Chinese Potato Stir - Fry
Ingredients
1. Chinese potato (Koorkka) (cleared & chopped pieces) - ½ kg
2. Crushed pepper - 1 to 1 ½ tbsp.
3. Salt - to taste
4. Coconut pieces - ¼ to ½ cup
5. Coconut oil / oil - 1 ½ to 2 tbsp
6. Turmeric powder - ¼ tsp
Preparation
1. Boil the Chinese potato with crushed pepper & salt till done with half a cup of water.
2. Add the oil to the frying pan, add the turmeric powder & coconut pieces sauté & add the boiled koorka.
3. Stir- fry slowly to your required level & remove.
