Kothimbir vadi, also known as coriander cakes, are a popular snack in India. Here is a simple recipe to make kothimbir vadi at home:
Ingredients:
2 cups coriander leaves, chopped
1 cup besan (gram flour)
1/2 cup rice flour
1 teaspoon ginger paste
1 teaspoon green chili paste
1/2 teaspoon turmeric powder
1 teaspoon lemon juice
Salt to taste
Oil for frying
Instructions:
In a large bowl, mix together the chopped coriander leaves, besan, rice flour, ginger paste, green chili paste, turmeric powder, lemon juice, and salt.
Add enough water to make a thick batter, making sure there are no lumps.
Heat oil in a deep pan for frying.
Spoon the batter onto a plastic sheet and spread it evenly to form a 1/2 inch thick rectangle.
Cut the batter into small square or diamond shapes.
Carefully drop the vadis into the hot oil and fry until golden brown.
Remove the vadis from the oil using a slotted spoon and drain on paper towels.
Serve hot with chutney or as a snack.
