三蓮袪濕湯
三蓮眉豆豬骨湯
材料:
蓮子2兩
蓮藕12兩
蓮蓬2個以上
眉豆2兩
豬骨2磅
椰棗10粒
薑2片
處理:
1. 眉豆,清水浸。
2. 蓮蓬,搣開細舊,放大碗內,加入粗鹽一湯匙,加入清水浸5分鐘。
3. 蓮子,去殼,取出蓮子芯。
4. 蓮藕,切兩端,打直一開二,打直切一條條,放蓮蓬內,清水浸。
5. 蓮蓬及蓮藕,清水洗乾淨,擎乾水。
6. 眉豆已浸了一小時,倒去水分,與蓮子一同沖洗乾淨,擎乾水。
7. 椰棗,清水洗乾淨。
8. 薑片,拍鬆。
9. 豬骨,大火煲滾一鑊水,出水3分鐘,清水沖洗乾淨。
烹調:
1. 大火煲滾清水5升。
2. 加入所有材料,大火煲滾,轉中慢火,煲75分鐘。
3. 湯已煲好,熄火,焗一小時或以上。
4. 完成,可享用。
Eye-brow peas and pork bones soup with lotus
Ingredients:
Lotus seeds 2 taels
Lotus root 12 taels
Seedpod of lotus 2 Nos. or more
Eye-brow peas 2 taels
Pork bones 2 lbs
Date palm 10 Nos.
Ginger 2 slices
Preparation:
1. Eye-brow peas, soak in tap water.
2. Seedpot of lotus, break in small pieces, put in a big bowl. Add in 1 tbsp of cooking salt and tap water, soak for 5 minutes.
3. Lotus seeds, remove shells. Take out the seed cores.
4. Lotus root, cut both ends. Divide it into 2 shares vertically. Cut each share into strpes. Put in the seedpod of lotus. Soak for 5 minutes.
5. Seedpod and root of lotus, rinse with tap water. Drain.
6. Eye-brow peas have been soaked for an hour, pour away water. Rinse with lotus seeds thoroughly. Drain.
7. Date palm, rinse with tap water.
8. Ginger slices, beat well.
9. Pork bones, heat up a wok of water at high flame. Boil for 3 minutes. Rinse thoroughly.
Steps:
1. Heat up 5L of water at high flame in pot.
2. Add in all the ingredients, heat up at high flame. Turn to medium-low flame and boil for 75 minutes.
3. Soup has been boiled well, turn off fire. Leave it for an hour or more.
4. Complete. Serve.
