Here's a simple and flavorful crab curry recipe:
Crab Curry
Ingredients:
1 lb (450g) fresh or frozen crab (cleaned and cut into pieces)
2 tbsp vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1 tbsp ginger, minced
2 tomatoes, chopped
1 can (400ml) coconut milk
2 tbsp curry powder
1 tsp turmeric
1 tsp cumin
1 tsp paprika
1/2 tsp chili powder (optional, for heat)
Salt to taste
Fresh cilantro, chopped (for garnish)
Juice of 1 lime
Instructions:
Heat Oil: In a large pan or skillet, heat the vegetable oil over medium heat.
Sauté Aromatics: Add the chopped onion and cook until it becomes translucent. Add the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
Add Tomatoes: Stir in the chopped tomatoes and cook until they break down and become soft.
Spices: Add the curry powder, turmeric, cumin, paprika, and chili powder (if using). Cook for 1-2 minutes to let the spices bloom.
Add Coconut Milk: Pour in the coconut milk and stir to combine. Bring the mixture to a simmer.
Cook Crab: Add the crab pieces to the pan. Simmer gently for 10-15 minutes, or until the crab is cooked through and the sauce has thickened.
Season: Add salt to taste and squeeze in the lime juice. Stir well.
Garnish: Sprinkle with chopped cilantro before serving.
Serve with: Rice or naan for a complete meal.
