I've watched a couple of videos featuring Filipino Muslim cuisine and I can already deduce from them that it is mainly based on burnt coconut, turmeric (giving that all too familiar yellow color you see in the video), sakurab, palapa ( a condiment made of ground sakurab which is a local variety of scallions, ginger, turmeric, chillis and grated coconut) & gata & that their most common & traditional food is called Patera or Pastera (depending on which area it's made) which comprises protein (chicken, beef, buffalo or fish) over rice wrapped in banana leaves, of which the most widely known is the Chicken Pastil and a lot of their food is influenced by Malaysian cuisine due it's close proximity. Delicious but not as varied as the other better known Pinoy dishes, but interesting noneltheless. I've tried Chicken Pastil myself and it is very similar to tapa or a dry adobo-style pulled pork. Very flavorful and a little goes a long way.
