Strawberry Roll Recipe *
Ingredients
For the dough
1 cup milk
2 tsp active dry yeast
-1/4 cup sugar
-2 large eggs
4 cups all-purpose flour
1 and a half tsp salt
6 tbsp room temp. unsalted very soft butter
Filling
frozen strawberries
2 tbsp white sugar
3/4 cup brown sugar
1 tbsp ground cinnamon
Frosting
200 ml double cream / whipped cream
3 tbsp powdered sugar
1 tsp vanilla extract
Warm the milk for 15-30 second in the microwave ( slightly warm to touch )
In a bowl of stand mixer, combine the warm milk, yeast and sugar
let it stand until foamy ( around 5 minutes )
Add eggs, flour and salt in the bowl and mix on medium speed until sticky dough is formed
Beat in the butter, 2 tbsp at a time until the butter is incorporated before adding the next batch
Once butter is incorporated , knead the dough for 10 minutes on medium speed
-Shape into a ball and cover with plastic
Let the dough rise in a warm place until double its size, or in the fridge overnight
Once the dough is double in size
Dust your work surface and rolling pin lightly with flour, roll the dough into rectangular size
Spread butter, cinnamon, brown sugar and strawberry compote all over the dough
Roll the dough into a tight spiral , cut the roll into 10/12 equal strips
Roll them up one at a time and place them into the baking pan
Cover and let the rolls rise in a warm place until doubled, about 45 minutes
Preheat the over 350°F ( 190 degrees C)
Bake the rolls for 20-25 minutes or until golden
Let it cool for about 10 minutes
-To make the frosting, whip together the double cream and add slowly the powdered sugar and vanilla extract
Add the frosting or whipped cream on top with some strawberries and sprinkle with powdered sugar.
