idk about the mess from frying the chicken breast, but I also wear oven mitts or wrap my hands with a dish towel or something so I'm not as scared of getting burned by the grease. It makes it easier to cook how I need to when I do that.

Tips when frying something, make sure the pan is dry and there is no drops of water or anything. The oil must be hot enough, also heat it low until it's hot. so you can start frying.
