Kalat:Pakistan on a Plate: Recipes: Kak/Karnu & Guan/Shenai & more E4

Kalat is one the more interesting episodes in the Pakistan on a Plate adventures; it is Baluchistan's Khanate pre Pakistan and before that the seat of the Seva sometimes spelled SEWA dynasty for centuries.....you cannot know Baluchistan unless you go to Kalat.
This ancient place is also the birth place of Kali Mata Godess whose name lives on forever as the city's name.
Shinai the wild pistachio berries/nuts are very unique to Baluchistan called Guan in Brahvi and this recipe is quite special linking the Pukhtun and Brahvi belts in shared food heritage.
Those who taught us how to make it in Kalat were quite amused since it has become out of fashion but they were very happy that someone cared and was reviving it.
Another recipe which we share here with you is Kak the very Baluchistani bread which is probably also The original of all breads, its fundamentals as will see tell you the conditions of Baluchistan and how for survival purposes, basic nourishment was made and preserved for long periods of journeys or as a result of regular food or the absence of food.
My curiosity, hopefully yours too, about who are the Baloch and Brahvi people leads me to some interesting revelations and conversations!

Thanks for this great video and bringing it to us. It is wonderful you mentioned about their funerary practices. The Dravidians in South India predominantly bury their dead and many castes also bury their dead in a seating position. Since prehistoric times entombing them in dolmens, sarcophagus, burial under the ground and sky burial are practises very native to the Indian subcontinent. Cremation was brought through outside influences by migrating, invading tribes. Earthen sarcophagus, dolmens and tombs are found all over South India. I speak fluent Tamil, Telugu, Kannada, Malayalam the most widely spoken languages in the Dravidian family. I can also read and understand ancient texts in Tamil which are several thousands of years old, because we learn them in school and its part of our daily life. Bravhi essentially has its voucabulary derived with its surrounding languages with a sprinkling of Dravidian words. But, its grammar is Dravidian. I am able to follow brahvi conversation because I am also fluent in Urdu and Gujarati and a bit of Saraiki and Punjabi. Dravidian speakers would not be even able to pick words in Bravhi leave alone following a conversation, unless they know N Western, Western Indian languages and it is equally true about Bravhi speakers intelligibility of Dravidian languages.I was surprised that they use the word Manjam ditto for bed/cot like in all South Indian languages. An other interesting thing I noticed is that the primary identity of Baloch/Brahvi people is their ethnicity and not religion, Dravidian's have the same world view, for an outsider it is very difficult to judge the religion of s typical South Indian, while it is not so in the North. My personal gut feel is that Braahvi is one of the successor languages to Indus Valley - Elamite -Sumerian language continuum. Tamil and its people clearly have some relationshup with the Elamites and Sumerians in language and culture. This is equally true of othe Dravidian ethnicities.
