Kalderetang kambing is a type of meat stew tomato-based Filipino dish.Traditionally, it uses goat meat, however, these days they prefer to cook it with beef, pork or chicken as it's more available in the market.This dish is stewed in tomato sauce and with other ingredients like potato, carrot, bell pepper and liver spread. Usually it is served during special occasions like feasts, birthdays, baptisms and holidays. Perfect paired with a condiment of fish sauce, chili, kalamansi and of course don't forget the freshly steamed rice.
Ingredients to boil the goat meat:
water (enough to fully submerge the goat meat)
2 stalks lemongrass
1 tsp peppercorn
35g ginger
Kaldereta ingredients:
7 cloves garlic
2 medium-sized onion
700g goat meat
1 tbsp fish sauce
1 tbsp soy sauce
1/2 tsp pepper
2 pcs dried bay leaves
200 ml soda (sprite or 7up)
2 small-sized or 200g potatoes
1 medium-sized or 200g carrot
2 small-sized green bell pepper
1 small red bell pepper
340g tomato sauce
85g liver spread
