Dip fry of aloo and baingan will be preferable as sallow fry is time taking specially when the quantity is large. Aloo takes more time to cook so if you cook both aloo and baigan at the same time the baigans will be overcooked and messy.

10.Jun.2020 Wow! This is my favourite too. This is 1st time I have made it myself (due to lockdown) and cooking Aloo & Brinjal at very start upto 80% is a nice twist. I like the way you have made mixed dry masalas in little water, before adding in hot pan. 👌😊
