Kashmiri Dum Aloo Recipe - A flavorful and aromatic dish made with baby potatoes, slow-cooked in a rich, spicy yogurt-based gravy.

Kashmiri Dum Aloo
Ingredients for Tomato Puree:
Tomato subes 1 cup
Onion cubes 1 cup
Kashmiri Red Chilies 7-8
Ginger pods 2-3
Garlic cloves 2-3
Water 1/2 cup
Ingredients for Boiled Potatoes:
Water as required
Potato (half cut) 1 kg
Ingredients for Fried Aloo:
Oil 1/2 cup
Boiled potatoes
Ingredients for Gravy:
Oil 1/2 cup
Green cardamom 2-3
Cumin seeds 1 tbsp
Cloves 6-7
Bay leaves 2
Kashmiri red chili powder 1 tbsp
Prepared puree
Coriander powder 1 tbsp
Garam masala powder 1/2 tbsp
Salt 1 tsp
Nestlé MilkPak Yogurt 1 cup
Fried potatoes
Hot water 1/2 cup
Directions for Tomato Puree Preparation:
In a blender add tomato, onion, kashmiri red chilies, ginger pods, garlic cloves, water and blend it well into smooth puree. Set aside.
Directions for Boiled Potatoes:
In a pot heat water and add potatoes. Boil until 50% done. Strain and set aside.
Directions for Fried Potatoes:
In a pan heat oil and add boiled potatoes. Fry until light crispy. Set aside.
Directions for Gravy Preparation:
In a pot heat oil and add green cardamom, cumin seeds, cloves, bay leaves and fry for a few seconds.
Add kashmiri red chili powder and fry for a few seconds.
Add prepared puree and cook for a minute.
Add coriander powder, garam masala powder, salt and mix it well.
Add Nestlé MilkPak Yogurt and mix it well. Add fried potatoes and water. Cover and cook for 10 mins.
Your Kashmiri Dum Aloo are ready. Serve and enjoy.

Cooking time: 40-45 mins
