Yummy recipe except for one anomaly. Gujaratis don't use sarson tel in their cooking. It is only used in Gujarati pickles. In most homes, ground nut oil, rai, heeng, green or red chillies are used for tadka in vegetables. You have made it a Kathiyawadi recipe with a Punjabi tangent. 😊

Kathiyawadis use plenty of oil to cook their vegetables in. Groundnut oil, not sarson oil. Gujaratis use sarson oil only in their pickles, never in sabzis. Water is sparingly used. Instead chhas is very prevalent in Kathiyawadi cooking. I have never heard of malai being used in Kathiyawadi sabzis. Dahi or chhas is used. Again, it is the Punjabi tangent that you have given to a Gujarati Kathiyawadi recipe. I suggest you learn authentic traditional recipes from authentic sources, rather than from restaurants. They make a miss-mash of it.😮

With what you had Bharva baingan,with bajra rotla,Kathiyavadis don't make recipes with mustard oil , it's only ,only peanut oil,or sunflower oil,cotton seed oil,your recipe sounds like Bihari,mustard oil.
