NOTE: In the video, I added 1/2 tsp of salt twice - once with the eggs and once with the dry ingredients (whoops) . You only have to add it with the eggs!
Nutella Mousse
Mousse Ingredients
1 cup cold heavy whipping cream (cold cream whips to soft peaks faster)
½ cup Nutella
Mousse Directions
Whip heavy cream to soft peaks. Microwave Nutella for 10 seconds, and fold 2 T into heavy cream. Fold in remaining Nutella.
Chocolate Sponge Cake
Cake Ingredients
4 eggs, room temperature
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2/3 cup flour
1/3 cup cocoa powder
1 1/4 teaspoon baking powder
1/4 cup vegetable oil
6 tablespoons buttermilk
Cake Directions
1. Preheat oven to 350F.
2. In a large bowl, beat eggs until thick and pale in color (about 10 min). Mix in sugar, salt, and vanilla extract.
3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Add dry ingredients to egg mixture, and fold in gently.
4. Fold in vegetable oil and buttermilk. Pour into a 15” x 10” jelly roll pan lined with parchment paper and sprayed with cooking spray. Bake for 10-12 minutes until a toothpick inserted into the center comes out clean.
