Might be a silly question, after draining from the beerdroid into the keg and carbonating, how long do you recommend storing the keg before drinking the beer. Is there a need for a 2nd fermentation?

No there is no need to wait for a secondary ferment as you already have carbonated using injected gas. You can drink straight away but depends on beer style, generally stouts get better with age, fresh hoppy flavours degrade over time.

an 8mm external silicon hose fits in perfectly to the tap, the one we used was 6mm internal

how long do you shake the barrel and how much psi?

It depends on the size of the keg and the temperature and pressure. There is no one answer sorry. You're best to go undercarbonated (say 20psi for 5-10min rolling) then set the pressure to final service pressure an let sit for a day or two, this way you won't over carbonate and can just check it over time till it's ready to drink.
