3:39 I don't want to be that guy (but I'm going to anyways), usually you kind of sort of have to cool down the rice like a lot before you use it and typically you'd mix sushi su (sushi vinegar) into your rice to help it cool down. While it's not necessary to add the Su in, it just makes it taste better.

I would recommend to cool the rice down it’s not suppose to be hot when putting it in the seaweed. Second use Kewpie Mayo instead of the American Mayo, the Kewpie Mayo taste better for a sushi sauce. Finally season the rice with rice vinegar, sugar and salt. Also you can tell if your knife is sharp enough by cutting through a piece of paper if it cuts all the way that means the knife is sharp. I only know this because I’m a culinary arts student for 2 years
