Creamy Rice Pudding

There are many ways to make rice pudding. Give this simple method a try! No eggs needed.
Ingredients:
1/3 cup of rice
1 cup of water
Dash of salt
2 cups of milk whole
1/4 tsp. of vanilla extract
Dash of cinnamon
1 Tablespoon butter
1/3 cup of white granulated sugar
2 Tablespoons corn starch dissolved in 2 Tablespoons water

I’ve never had to add cornstarch to my rice pudding. Rice pudding thickens up a lot on its own.

I have to make rice pudding again but with brown rice this time. I've found that cornstarch thickening tends to break down in the fridge so I use it only when making anything I'll eat right away. Leftover Chinese takeout would be watery the next day.

I've heard of cornstarch pudding. Never tried it. Rice pudding with raises is one of my favorites. BTW Costco just started selling Sona Masoori Rice. I have never heard of it but I bought a 20 pound bag. It says right on the bag it's "Perfect for Risotto and Puddings." So some of these pepper channels are saying some things will no longer be available, but I can live with this type of substitute!
