Awesome! I soak the fruits and literally picked the stem from the raisins. Then I steam, then blend with port wine, red label and white rum

I love Caribbean people. Always happy and jolly. I'm from the depressing UK and I have a Caribbean friend. She always cheers me. I love to make celebration cakes usually with the traditional brandy but rum sounds great. As long as it's not your famous 90% proof stuff. Thank you.

Thanks for sharing. In Trinidad (How my mum showed me) we would use a hand mill to grind the fruits and then add the rum. Now the blender is used and yes look out for those prune pits. We use Sherry Brandy (similar to Taylor's but not as strong) and Rum. It's made 3 months or more before baking, but these days weeks before is just as good and the longer you leave it to soak the better. Looking forward to the actual cake making session ❤

Never seen anyone use maraschino cherries in their soaked fruits before, I have always seen glazed cherries used since it’s a firmer texture 🤔 interesting I am sure it gives a different taste.

Hi Habiba. Perfect timing. My Sister in London who does excellent Black cakes is visiting me in the US for Christmas. She gave me the list of items to purchase & soak. I had a hard time finding port wine. Finally, found the Taylor brand & will soak fruit on weekend. Looking forward to your other videos in this series 🥰👍🏽

I hope you get to make this one day . Yes it can be a lot of work but it tastes so much better than the store bought versions which tend to look nice but have less fruit and wine but more color and preservatives . I thought about selling cakes again with in the USA 🇺🇸 but bulk cake making and dealing with packaging and shipping is a little too much for me now . 😅 I can only handle making a few cakes at a time .

Hello lovely lady, I loved watching your video on Black Cake. I wish we had smell-a-vision so we could smell the delicious fruit you have soaking in booze in your kitchen. It looks beautiful and I'm sure that it tastes even better. I've just bought a bottle of spiced dark rum to soak my dried fruit in this year for Christmas, but I've left it a bit late. Should I put the rum and fruit in a saucepan and bring it to the boil so that the fruit soaks up the rum more quickly, or can I just soak the fruit in the rum for a couple of weeks? Thanks again, love from Amanda in Australia P.S. The glace peel we get here in Australia is really awful, so do you know how I can make my own?

Maraschino cherries are not American. They are the Marasca cherries from the former Yogoslavia and Northern Italy. Soaked in Maraschino liqueur which came from Croatia. At the time 200 years ago was part of Venetian Republic.

My fruits have been soaking for almost two month now. I have a very similar glass jar to your one gallon container. I noticed that you used parchment paper under the metal lid. What is your reason for doing this? Also do you have to stir or shake the fruit in the jar every once in awhile, or can you let them sit undisturbed?

I have two 1-quart jars of soaked fruit that have been sitting in my pantry for about 2 years. It was going to be my first time trying to make the black fruitcake but life got in the way and I haven't used it so far. It has been in the pantry all this time and has not been refrigerated. Would the mixture still be okay to use even if it wasn't refrigerated? Is it normally required to do so?

Either. Save in a dark place in your cabinets or in the fridge. As long as fruit is covered with sufficient alcohol it 😅serves as a preservative.

No problem 😅 Alcohol is a preservative and as long as the jar is airtight it doesn’t need refrigeration. Usually it is kept in a dark cabinet; however if you feel more comfortable you can place jar in the fridge . Currently I have a few jars in my back fridge.

I store the soaked fruit in a cool room or closet and sometimes I do store them in the fridge if I have room. Remember Alcohol is a preservative plus the sugars from the fruit..

@@Kenton-Habiba Thank you. I have mine in a dark cupboard. It’s in a 3 litre glass mason jar. It is heavy with all the fruit and two bottles of alcohol. Great full it can be stored in a reasonably cool, dark place. I’m looking forward to making my first Caribbean fruit cake. Merry Christmas 🎄
