Over the fire means over the fire not necessarily a skillet over the fire. He should have covered the steak with olive oil or another high temp resisting oil, salt and pepper then over the grill grate over the fire. That’s all that’s needed. No pressure cooking like in a oven or skillet. C’mon Cave Man.

To our Texas amigo: have you ever been to, I think it’s called Snook. Outside College Station. Had a porterhouse there it was advertised at 2 pounds which is just short of a kilo. They are also known for their chicken fried bacon. Quite a place. Now that’s Texas beef.

@@catchincolds Had to check for the menu. Looks like they are still in business. at least menu is posted. no weights given on menu but prices look decent until beef cost went up because of pandemic. Would love to revisit Sodolak's again some day. It would be a good trip for a couple of days visit. hope you enjoy it if you are able to make the trip

Andy, given the fact you have an outdoor oven, here's a recipe that we like - shirred lemon eggs. They go great with bacon! SHIRRED LEMON EGGS butter for the ramekin2 tablespoons heavy cream (separated) 1/2 teaspoon lemon zest 1 1/2 tablespoons grated Gouda, Gruyere, or jack cheese 1 egg salt and pepper to taste roughly 3/4 teaspoon minced parsley. METHOD: Preheat oven to 325F. Liberally butter the ramekin. Pour 1 tablespoon cream into the bottom of the ramekin. Sprinkle 1/4 teaspoon lemon zest over the cream.

Enjoyed the porterhouse video. Liked your new intro! My wife and I usually cook the porterhouse 'Bistecca alla Fiorentina' and serve it on a bed of arugula (rocket) salad with shaved Parmesan, lemon and olive oil, with a side of Tuscan cannellini beans! Yum!
