If you want a crispier skin from an air fryer, add a tablespoon of baking powder. If you want that classic texture of the coating, add some rice flour to the flour mix, it sticks and provides that clingy flour texture.

we used our new air fryer just tonight - whoa. 2 teaspoons baking powder; salt/ pepper to taste/1/2 garlic/1/2 tsp paprika. No flour. For 4 ppl four legs/thighs. It was crisssspy! I was sure the amts had to be wrong. But next time, I will try this. I've made it very crispy also with panko (not in air fryer tho not yet). But KFC recipe looks great!

For a crispy skin, try a Tablespoon of corn starch mixed in with the flour and seasonings. I guarantee crispier skin.

I just tried this recipe and it's really good!! The only thing I modified was that I used homemade buttermilk (1tbsp vinegar to 1cup milk) because it's cheaper, and I cooked my fried chicken at 360°F for 20 minutes💚 I don't know what you guys are complaining about. Her personality seems really infectious! Edit: take a 1 cup sized measuring cup, add a tablespoon of white vinegar to the empty cup, then fill it with milk to the top. I used 2% milk for mine, but I'm sure you would get more flavor from a milk with higher fat content. Edit #2: I used an air fryer to cook my chicken, and was cooking already thawed chicken. I cooked dark meat, but I'm sure it would be just as yummy with light meat! My nieces were (and still are) finicky about light meat.

Take the chicken from the buttermilk and roll in flour mix 7 times. Put in air frier. Variations for the mix: 1. add on Tbs baking powder 2. Add rice flour to the mix

Wrong recipe. I shouldn't be doing this but here's the real KFC chicken recipe... 8 cups flour 1 cup salt 1/2 cup of accent 3 tbsp black pepper 1 tbsp white pepper 1 tbsp garlic powder 3 tbsp oregano 1 tbsp thyme 1 tbsp paprika 1 tbsp cayenne pepper 1 1/2 tbsp cumin Mix well and store in a tight jar or sealed bag, the longer it is stored the better it is. Clean chicken, wash and dry. Dip chicken parts into beaten egg. Shake/mix in bag and deep fry @350-400F for 10 minutes, or until brown, use own discretion depending on the fryer. Use only oil. Enjoy! This recipe comes straight from the vault, there's more info on cooking times and chicken parts but you get the jest.

I worked at KFC as a teenager in high school and I can tell you that we never soaked the chicken in buttermilk. The Chicken comes off the truck in single, individual bags already pieced out and then its seasoned with the ingredients/flour with the herbs and spices right before putting it in the fryers. They may do it different now, I worked there in the early 80s - and yes, its still my favorite chicken today too. Nice video, thanks for sharing :)

I agree...I worked there in the late 70's. We did have seasoning packets we added to the flour, and we dipped the chicken in milk/egg dip before coating it in flour, but it wasn't marinated. The only chicken that was marinated was the extra crispy, but the only seasoning it had was salt and pepper. And in most of my copycat recipes I've tried, sage is always one of the spices...in fact, my taste buds always taste sage or poultry seasoning when eating KFC Original.

I worked at KFC in 1966 at the age of 18 & never soaked in buttermilk, just milk, then seasoned flour & it was cooked in huge pressure pots with oil... we made real onion rings using a slicer that looked similar to a school paper cutter, 4 types of cream pies, milk shakes, & even hamburgers back then.... and it was take out only.

Hey here is a tip for you. Instead of putting flour and stirring in other dry ingredients. Always try and put every dry ingredients in a plastic bag, blow it up a bit. twist the top and shake it. You will get a quick and even distribution in a flash.

okay, she IS trying to market the air fryer, but it also proves that IF she left the chicken for another few minutes, it would have been burned or the outside would be too dark looking for the pretty pictures because, she really does not know the secret to it all. But she is "doing" it - the effort in youtubing and marketing for the money. That's better than what I'm doing for now. Time has little to do with cooking chicken safely. It is all about the internal temperature of the chicken. Overcooking will result in dry, leathery meat, so you want to remove your chicken as soon as it reaches the desired temperature. "The USDA recommends cooking whole poultry to a safe minimum internal temperature of 165°F as measured using a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast."

I tried your recipe, really nice. I worked at KFC in the early 90s, it was just dipped in water with powdered milk and egg mix. No buttermilk. I think was cooked in shortening too or shortening/oil mix. Can't quite remember now. But the pressure cookers are the key :)

I worked at KFC as a cook during my senior year in high school and into college. The original recipe is NOT soaked in buttermilk. The crispy recipe is dipped in buttermilk prior to the flour coating but original is simply floured from fresh chicken with the spice recipe mixed into the flour.

Looks ok if it was cooked longer. I was a cook for KFC for 3 years we never soaked our chicken in butter milk , it was a quick dip in a very thin butter milk solution in a basket then straight to the seasoned flour mixture , we didn't roll each piece 7 times either, we scooped the chicken up and down in the flour until it was coated and then tapped off the excess flour . Their are a few copycat products out there that are pretty darn close... here are some of our favorites Kentucky Kernel and believe it or not Menards has a great one too I add a little bit more of white pepper to it , The name of Menards is Shore Lunch classic fried chicken. My family has been using this for years. Trust me when I tell you we know Chicken, My 3 sisters and I started working for Kenny Kings before they changed the name to Kentucky Fried Chicken . @Alfred Zocchi powdered milk is in fact in part of the 2 packages when preparing the flour. Also to my knowledge KFC never outright used a “butter milk” solution to dip the chicken in, the chicken is dipped in water (I managed KFC longer than 3yrs & was sent to the KFC university in Kentucky)

@@airselectricalcontractors842 The chicken is never pre soaked in buttermilk, if you use liquid buttermilk your crust will be dark and the chicken wont be done all the way. Look at hers at 0:03 The water we use was plain cold tap water out of the faucet. Dipping the chicken in water before putting it in the flour is just to cleaned up and wet it so that the flour really sticks to it. I havent tried this reciepe because I already know the outcome, plus orignal chicken is pressure cooked in oil. Also the "secret recipe" is just for the orignal not the crispy

If you don’t have buttermilk, you can easily make your own, with regular milk, then add 1tsp of vinegar or fresh lemon juice. Soaking it 24 hours will tenderize chicken, this is not a KFC trick but one that many grannies have used for years.

I did my KFC chicken time in a Company store from 1970 through 1972, when one fry cook kept eight big pressure cookers going continually, including all the prep-work, and then had to clean up the joint! The whole process was a meticulously timed dance, and as the last four chickens went in the last two pots, the first two pots were ready to dump on the draining racks. And on and on... I applaud your effort to recreate the spice recipe, but the chicken was Never soaked in buttermilk. The fry cook would rinse the chicken at the sink, removing the excess fat and dislocating the thighs, and re-bag it, two chickens to a bag. When ready to bread the chicken, one bag was dumped into a strainer-with-handle, and immersed briefly in an egg wash which was made from a KFC packet of dry milk and egg. No Buttermilk Was Used Anywhere In The Process. You are correct in that the process is a vital part of the recipe, but that includes the pressure cooking in vegetable oil. You can get close, but you need the whole process to get the real thing.

@@RebeccaBrand The secret recipe in their mash potato sauce is the crispy crumbs left behind from the frying process. In this case it's the stuff you threw away at 8:00. They collect that while draining the oil from the pressure fryer, rinse with water to remove excess oil, drop the crumbs into their broth solution, and quickly blend it in the blender. The broth is heated and added to the mash potato and bamm, best mash potato gravy ever! (Former fryer at the KFC).

I'm sure this recipe is very good, but I'm pretty sure the KFC I remember (I haven't eaten it in a long time) also had sage. Sage, pepper and garlic were the things that stood out the most to me.

Rebecca I want to thank you. I made a list of all the spices I needed and went to the store. Now I'm ready to go and wouldn't you know it, I forgot the buttermilk. But, you somehow must have known I would do that because you told us how to make our own. I just did that and tasted it. Yup. It tastes like buttermilk to me. Switch out celery salt with celery seed and onion salt with onion powder, reduce the amount of pepper by 75%, use nonfat dry milk and powdered eggs for egg wash and you might get close.

It doesn't use buttermilk and you have a few of the ingredients wrong and you didn't include monosodium glutamate. This is someone who worked for KFC when we still cooked in pressure cookers on the stove and had ingredient packs with ingredient list.

For those of you criticizing her acting abilities, not everyone is born an actor or actress and doesn't know how to appear onscreen. Last time I looked, this was a cooking recipe, not a tryout for the Golden Globes, although her golden globes look perfect to me. I happen to be a great actor and public speaker, but I do not criticize those who aren't (except for Jeff Gordon. He was horrible in the Pizza Hut commercials and should have stuck with driving). So, unless you have IMDb credits yourself, please do not judge her presentation, okay? Rebecca, if you will show me how to use an air fryer, I will teach you how to speak publicly. Awesome!! Just got an air fryer a couple of months ago going to give this recipe a shot. Love fried chicken with less grease. The added benefit of this is YOU control the size of the pieces. I find that the KFC's where I live locally the pieces of chicken are so small.

The pieces of chicken are the same size as pigeons. Every food item at KFC has shrunk, (smaller portions) and have you noticed, that the sides have more sauce than the actual food itself. e.g. more loose cheese sauce on the macarons, then pasta, and more loose mayonnaise on the cole slaw, than cole. I believe the reason is, that the company wants to save money.

Thank you Rebecca for making this demonstration. I have seen other copycat KFC recipes and tried them a few times, but yours is the closest. I tried your recipe yesterday in my Air Fryer. I got a bit mixed-up with my timer and may have slightly overcooked. I thought it may need a bit more Thyme and possibly Black Pepper. I had just over 100 g of Spice mix left over, so I will make those adjustments today to try get the recipe even closer. I like your enthusiasm and cheerful personality 😉. Happy cooking 🍳 😋 x Mary ✨

Great video - great insight into the 11 herbs and spices. I think what they mean by coating 7 times is re-dipping it into the wet and then the dry mix 7 times to get that nice thick coating. Also I'm adding an egg into the wet to make it thicker and hold the dry better.

Wrong recipe. I shouldn't be doing this but here's the real KFC chicken recipe... 8 cups flour 1 cup salt 1/2 cup of accent 3 tbsp black pepper 1 tbsp white pepper 1 tbsp garlic powder 3 tbsp oregano 1 tbsp thyme 1 tbsp paprika 1 tbsp cayenne pepper 1 1/2 tbsp cumin Mix well and store in a tight jar or sealed bag, the longer it is stored the better it is. Clean chicken, wash and dry. Dip chicken parts into beaten egg. Shake/mix in bag and deep fry @350-400F for 10 minutes, or until brown, use own discretion depending on the fryer. Use only oil. Enjoy! This recipe comes straight from the vault, there's more info on cooking times and chicken parts but you get the jest.

I have never understood the craziness about KFC chicken. In my opinion, KFC is pretty good but not the best chicken I ever ate. My mom was a great cook and her chicken was great. The best fried chicken I ever bought was from an Amish restaurant (real Amish) in northern Indiana. Most people don't fry chicken at home so only know what restaurant chicken tastes like. This is not to knock KFC. I eat it once in a while and it is tasty but nothing special to me. I got here looking for air fryer recipes since I am learning how to use my air fryer. I am mainly interested in the spice combinations that youtube chefs are using. Thank you, Rebecca, for this recipe.

I encourage everyone to do their thing, so there are no criticisms for the young lady. I have worked at KFC twice in my life. As a teen it was my first job while in high school and then I worked there again a few years ago after retiring from the military as a way of keeping myself busy. All I can say about the recipe as well as their whole process is that it is proprietary and trademarked, so to get the recipe down, it might take one of several things. (1) When I worked there, I managed to get away with a couple bags of seasoning, but did me little good because I although I was trained how to cook their chicken, I still lacked the equipment ("The Henny" or otherwise known as the pressure fryer) which would allow me cook in the same manner for the same amount of time. (2) To actually get the recipe the seasoning would need to be reversed engineered, but I've always found that it wasn't that serious, because I never planned to compete with KFC. (3) Someone steals the recipe and passes it out, but again not that serious to risk jail. So again, congratulation to the young lady for having the courage to put out a video that. Here are some tips for anyone interested. First. the butter although a nice touch, KFC (at least least the two that I worked in different locations and time) never soaked the chicken for 2 minutes let alone 2 hours. The chicken was dipped and immediately floured. The only thing that used to call for buttermilk was the biscuits, but even now they come to the store pre-made and frozen. When flouring, get a large tub like the ones that the 24-40 piece plastic storage containers come in. Everything will be trial and error and I have no advice on air fryers as I haven't used one for frying chicken KFC style before. So good luck to everyone and I hope this was helpful. I also worked for Bojangles (like Popeye's) back in the day. Those recipes may be a little simpler to replicate.

Thank you for the compliment. Writing and speaking becomes second nature after a long career of having to communicate directives and counsel soldiers. Everything used to come pre-packed with simple directions and no ingredients written on the package . The biscuits and gravy were the only thing that was made fresh, but even that has changed. Imagine my surprise to discover frozen biscuits and gravy that you now only have to boil water. Everyone is concerned with the bottom dollar, which is directly translated from efficiency. So if it takes too much time, it doesn't equate to profit. I suppose if you shave 40 minutes in the preparation of biscuits than you have 40 minutes or so to create profit. The gravy was actually made from the drippings drained from the filter in "the henny". Anyway, back to the chicken. The chicken was supposed to be washed, and not be mixed any batched not from the bag to prevent cross contamination. The chicken was dipped once for original and twice for crispy. The flour was a 20 lb bag if my memory serves me correct (it was the 80's), 2lb box of salt, then of course the herbs and spices. I personally don't believe the secret was in the mix. I believe the secret was "the henny penny". Anyone can dump chicken in a vat of oil and it will all be fried chicken to some degree. However; no one was frying it with a pressure cooker. I think "Lee's Famous Recipe" uses a pressure cooker and although very good, it's still not the Colonel's. Stay encouraged, you'll figure it out. And if through trial and error, I should come as close as humanly possible, I will share with you.

Well, to be honest it was lard, but I'm sure you could get away with vegetable oil. Or, even peanut oil. But it was about 5-10 lbs blocks and the heat of the henny heats it up until melted. If truly interested. check ebay or auctions, because in business...all equipment has a shelf life...meaning, a business wants to make sure it can make money, even on the way out. So, instead of salvaging or scraping, the business would rather sell or auction, because in accounting there's depreciation, but a business also wants to maximize the profit potential. So, check ebay for used equipment, sa well as auctions. Google is your friend, so treat it as such and utilize the power of gathered information, Be bold and ask a KFC what is done with the equipment. Creative thoughts and strategies usually leads to unimaginable results. Good Fortune to you.

I worked at KFC for over a year and we didn't dip it in buttermilk or roll it 14 times. We bread it in flower, dip it in water, yes "water" and bread it again and then it's cooked in pressurized oil. Who know's what was in those seasonings because we just ope up the packets, add it to the flower and mix it together with our hands. She really didn't have to do all the laughing and giggling, but anyway, that's why we all love youtube and I've uploaded some regretable crap myself.

I worked at 2 different KFC's as well and the crispy chicken was the one we dipped in water and flour twice. The original we just rolled in the seasoned flour SEVEN times. Way back in the day, we did roll all the chicken in a marinade which consisted of a milk based powdery mix, but they stopped that a long time ago claiming all of it was in the flour(we all thought it was a corporate move to save money). That's the reason it doesn't taste nearly as good as it did back in the day.

The original recipe probably started out with buttermilk, because that's how many people used to cook fried chicken a long time ago, and some still do today. However, because this has been commercialized and they're selling it to millions of people, I wouldn't be surprised if they took the buttermilk out of the original recipe to save money and maximize profits.

Well as an avid air fryer user, though mine is a larger oven style, I'm definitely going to try this. Though most likely I'll try it in my deep fryer first, I like the flavor of fried food and having watched my dad, and his thirteen siblings eat fried all their lives. Living to an average age of 95. I don't put much stalk in most "healthy cooking" I hear 🙂

Just had organ removal surgery. Doc put me on a recovery diet to eat healthy by cutting carbs, cook with less oil, etc. So I was looking into these air fryers. I used the jet-stream oven back in the day, I also have a nuwave oven. I assumed that the air fryers were the same as both of those, being air convection. But apparently they’re better. A friend of mine swears by hers. So, 🤔 I may just have to go get this. Oh, and I give this vid 5 BBs 🔘🔘🔘🔘🔘 💙✌🏻

ahwhh, so nice! Thank you Sock Owe I'm so sorry about your organ removal!!!! I wish you a quick recovery and good health -- sounds like a gallbladder -- don't tell me but-- I've had issues with mine! I am telling the absolute truth, I LOVE THIS THING and this one!! It is my favorite appliance now -- my favorite used to be my breadmaker (so easy and I love fresh bread) but now this is it!!

Rebecca, thank you for sharing the recipe. 2/3 tablespoon salt = 1 teaspoon Its the same measurement. Same for 1/3 tablespoon = 1 teaspoon oregano I don't have 1/3 tablespoon measuring spoons.

I worked at KFC . The buttermilk and coating 7 times is not true. U just have to dip the chicken in water and coating twice . Also the powder gets mixed with dry powdered eggs. And There's a special type of oil that's used that the supermarket doesn't sell.

Thank you for sharing! I love your charismatic attitude! I think your recipe is a force to be reckoned with. I have too worked on this for many years. The only difference really between mine and yours is that I have nutmeg in mine and it takes quite a bit. I have checked with employees at KFC and they all say that they don’t marinate that original recipe. But regardless, I’m going to do it the way you just did this. Thank you for your kindness and sharing.

You did a great job presenting a good alternative to cooking healthy chicken yet still have the great taste of kfc i did not notice a difference in the taste although your recipe tastes a lot better and not so greasy . thank you and please keep up the good work i always like to watch and learn being a beginner in cooking

I'm glad you like the recipe and find it similar -- I think it may have a tad extra pepper, so I also created another recipe that was an adjustment -- to the recipe I had found of KFC. Thank you Rebecca for this recipe. I'm gonna try it tomorrow. I have been fascinated by KFC since I was a kid and my parents used to deny it to us because we didn't have a lot of money. Nowadays I get cravings for it and eat it occasionally, but in Australia KFC is quite expensive (like other take away food here). Plus they cook their chicken with Canola oil and it has a bad aftertaste. I've been looking for a good counterfeit recipe for ages and I think this is as good as I'll get. Plus it's inspired me to maybe buy an airfryer. Mmmmmm, chicken.

Terrific! thank you for your great comment, but I have to say I like my VERIFIED KFC spice recipe better, this one had too much pepper, the wikipedia was just wrong.

Yes, over here even the smell coming from a KFC is quite sickening. It smells like rancid over used Canola Oil. I find it disgusting, but that may just be me. Going to try this recipe though. If you have not already purchased an airfryer make sure you get one with a square basket, utilises the space a lot better. 👍🦘🦘🦘

@@mach1553 It's the rubbish oil they use, i can smell a KFC before i even see one. The only way i would feed it to a dog is if i wanted to kill the dog. I know what you mean though about that sick feeling, so realistically why would you eat something that you know is going to make you feel sick.
