You are actually right. Insulin resistance has become a pandemic spreading around the world. My wife and brother suffer from insulin resistance, so we must fight this disease.

I don't know what I'm doing wrong. I've started a keto diet twice and both times in week 2 I felt really depressed to the point that I had to stop.

Keto vegetarian is quite difficult to implement daily. Is there any research on using low carb foods as a way to periodically rest the brain for improving insulting resistance? Example: every weekend, implement low carb diet, and a regular (healthy) diet for the work week (no highly sugary foods but fruits and lighter carbs are okay) to maintain energy levels for work.

Avocados are high in fat and, in my experience, are very good on a ketogenic diet. Sunflower butter (no sweetener added) is also good. If I was vegetarian and trying this diet, I would stay away from fruits, and look into the carb count of different vegetables, nuts, and grains (a lot of people look at net carb, which is grams of carbs minus grams of fiber). When I say grains, I am not thinking wheat, oats, etc. I'm thinking that millet or other unusual grains might have lower carbs.

Yes. Dr Ben Bikman, Dr Annette Bosworth, and Dr. Shawn Baker talk often about this. In Dr Ede's first slide here, she defines the ketogenic diet as a state where your blood ketones reach at least 0.5mM, this is the beginning off being fat adapted, the body using fat as energy source. Ketones only go high if insulin is low. The more in tune we are with foods that do not cause an insulin spike, the better the ketones levels are.

I do not think that a diet will help here. The main problem seems to be a disfunctional blood brain barrier with defect tight junctions. And I think the next few years research should focus on this problem. Because no matter if the disfunction is caused by genetic reasons, drugs like methamphetamin, heroin... certain viruses and bacteria like for example covid19, but also cholera... this is what causes in the first place oxidation of the brain. And if the blood brain barrier is defect no diet can bring any real outcome here.
