What do you mean he embezzled the money? it was clearly shown in the episode that he just worked in the bar and people bought him drinks after he got famous from the documentary, he doesn't drink so he just received it as store credit, and the credit added up so much so the owner just made him as a business partner.

Its not unheard of for a pro player to borrow money from other players or businessmen to buy in to a tournament with the understanding that he'll give up a percentage of his winnings or pay the debt back with interest. Scotty Nguyen is notorious for winning 10s of millions in back room high stakes games and quickly losing it all only to win it back shortly. This is a guy who's won the world series of poker tournament 5 times and considered one of the best heads up (meaning one on one games) players in the world and he's been in and out of debt so many times that it's kinda of an inside joke amongst friends on whether Scotty will pay the bar tab in cash or with credit ie paying with his own money or borrowing it
