Key Lime Pie Recipe
For the crust:
1 1/2 cups graham cracker crumbs
2 tablespoons brown sugar
1/2 cup unsalted butter, melted
1/4 teaspoon salt
For the filling:
3 large egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup key lime juice (freshly squeezed)
For the whipped cream:
1/2 cup heavy cream
1 tablespoons confectioners’ sugar
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F
Make the crust: In a bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then allow to cool.
Prepare the filling: Whisk together egg yolks, sweetened condensed milk, and key lime juice until smooth. Pour this mixture into the cooled crust.
Place the pie in the oven and bake for about 15 minutes, or until the filling is set but still slightly wobbly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours.
