If a vegetable is cooked in a way the Biryani is cooked like marinating the vegetables first, putting all the biryani spices, layering vegetables and rice while cooking, using kewda water then why wouldn’t be this called a Biryani. On the other hand Pulao is cooked in a totally different way. It is cooked like the way vegetables are generally cooked. So a vegetable Biryani can never be called a Pulao.

Dear Khalid, Good to see you exploring places in Mumbai. My recommendations for Biryani in Mumbai: Cafe Noorani for their Chicken Tikka Biryani Lucky Restaurant at Bandra West Delhi Durbar at Colaba I think the best biryanis in Mumbai are still done by home chefs who put in a lot of work, time and let the process happen step-by-step. It's hard to get that in a restaurant. Though I'm from Mumbai, the best biryanis are found in Hyderabard. Ramadan good wishes to you and your loved ones. Peace!
