if you want to save energy, time and material, put your ingredients in a microwave pot (spices, soda or papad kharo, 1 pot flour in 1 1/2 pot water), mix it and heat it covered in the microwave at aprox. 75 % power until it has completely changed its color. stir it every 2 minutes to control the cooking process. When the dough is done put it in a kitchen machine and let it work with the dough hook until the dough has cooled down. Then proceed as shown in the video. btw.: u can mix the rice flour with lentil flour or besan flour to get a whole different taste. or u use only lentil flour or besan flour as u like.

Rinkuji ! Very nice receipe. I live in California can you please tell which brand of rice flour you use to make khichiya? I tried to make earlier but rice flour has no stickyness so it was hard to roll.

I am trying your recipe soon and this is my first trying to make khichiya papad alone as no one to help me and first time after marriage. little scared though will try because I liked your way of small cozy vessels with small batch. Mam, what should I do with the balls when I am rolling if the balls gets cooled down can resteam the dough or should I keep them in the steamer at low temperature because my rolling speed won't be that fast I will share my pictures of papad with you if they come out well

+Nirali Patel while you are rolling it put your rest of the balls in closed bowl or box and you can put that bowl in steamer without turn on the heat of steamer. and if you have casserole that would be the best to keep rest of the balls. +Nirali Patel ... yes you can..tht's why i showed both the version ..if your dough is steamed well than you will be able to roll it very easily..if it sticks than it means that it is little bit uncooked..and if you are rolling it then work in small bathches so lot will not get cold..

3 1/2 bowls of water, 2 bowls of rice flour, 1 tsp ajwain, 1 tsp cumin seeds, 4 tsp salt, 5 tsp green chili, 2 tsp sesame seeds 3 tsp papad kharo (or baking soda). Boil water and immediately add spices and then the rice flour. use end of wooden spoon to stir the mixture. When a little cooled make small balls and steam them for 20 minutes. Then mash the mixture fast and take out of the lumps to make a smooth dough. Use a tortilla press to make them. Set outside to dry for 2 days and take inside at night. We don't want to feed the rats. These will last for up to a year and fry them to make a delicious papad.
I like your recipe and would love to try, the only problem is there is no freaking Sun in Ireland. Will they be any good if after the prep, you skip the drying and go for frying?

+vrushali ambavane I used store bought rice flour...if you are making at home and if your rice is coated with preservative ( castor oil or boric powder) then you have to wash it otherwise its fine..

how much baking soda we can add if we don't have papad khara can't we direct make papad after preparing dough why we have to steam that

same amount of baking soda you need to use... when you mix first time it will be almost raw dough even though you are using hot water .if you can make papad with that but you will get raw lumps of dough in papad and it will bread easily..once you re steam it..it will cook properly and you will get good result..

i bought mine from india.. you can use chapati machine but you will little thick papadi..so after pressing in machine you can just roll with rolling pin one or two times and it will be perfect
