Ingredients:
For the Basic Gravy:
2 kg onions, peeled and chopped
1 kg tomatoes, chopped
2 tbsp turmeric powder
4 tbsp coriander powder
2 tbsp garam masala
2 tbsp red chili powder (or Kashmiri red chili powder for less heat)
Salt, to taste
3-4 tbsp cooking oil
For the Nut Paste:
1/4 cup almonds
1/4 cup cashews
2 tbsp melon seeds (or substitute with more almonds or cashews)
Water, as needed
For the Kadai Paneer:
250-300 grams paneer, cut into large cubes
1 large onion, cut into large chunks
1 large bell pepper (capsicum), cut into large chunks
2 tbsp Kitchen King Masala
1 tbsp Chole Masala
1 tbsp kasuri methi (dried fenugreek leaves)
1 tsp red chili powder
Fresh coriander leaves, chopped (for garnish)
1 tbsp ghee (clarified butter, optional for garnish)
